Show Kitchencraft Lamb Shanks Kick Expense Out of Your Budget By MRS. GAYNOR MADDOX Lamb shank will help you kick high costs from your meat budget. And you'll have a flavorsome time doing it. Lamb and Barley Stew Serves 4 to 6: Two lamb shsnks, 1 clove garlic, 1 onion, 1 carrot, bay leaf, 1 teaspoon water, 2 teaspoons salt, H cup barley, 1 bunch carrots, car-rots, onions and turnips, if desired. Brown lamb in heavy kettle with minced garlic. Add sliced onion, carrot, bay leaf, pepper and boiling boil-ing water to cover. Simmer until meat begins to fall from bones. Drain off broth, cool and remove fat. Separate meat from fat and bones. Soak barley over night and cook in salted broth until tender. Add quartered carrots and other vegetables as desired and cook until tender. Add meat, heat and serve. Chill Con Came With Beans Serves 4 to 6: One pound ground beef, 2 onions (chopped), 1 tablespoon table-spoon butter, 1 large can red beans, 2 cups tomato Juice, 2 teaspoons salt, pepper or cayenne, 1 tablespoon table-spoon chill powder. Brown onions and beef In melted butter, cook for 10 minutes. Add beans and pour In the tomato juice. Arid salt, chili nowder and a dash of pepper and cayenne. Simmer for IS minutes. Broiled Chopped Round Steak With Lemon Juice Serves 4 to 6: One and one-halt pounds round steak (ground), 1 tablespoon butter, Juice one lemon, salt and pepper. Select fresh, moist meat. Wet the hands, then shape the ground meat Into a large ball. Flatten the ball into a steak-shape, about tt Inch thick. Do not season it before cooking. . Use large heavy frying pan or griddle. Get very hot. Do not grease. When pan or griddle is almost searing hot, plank the steak onto it. "Broil" one minute, then turn carefully and "broil" on other side for a minute. After that, reduce heat and cook three minutes. Remove to very hot platter. Season, dot with butter but-ter and squeeze lemon Juice over it. Place In oven a moment, then serve. It is delicious!
