Show TURKEY TIME AGAIN 1 Use Those Luscious Berries The festive board is piled high with good things to eat the crystal glimmers in the candlelight candle candle- light and the horn of ot plenty once more takes its place as a centerpiece This year the family is together in the old way and the Thanksgiving prayer spoken by one is re repeated re- re by all all that peace shall be ours to cherish all our lives that just such a family gathering gathering gathering gath gath- ering may take place every year Mother is the center of activity t ty these busy days and tiny hands are more than willing to help with the hustle and bustle Mrs Edward Girard Hale for example and her two daughters daughters daughters daugh daugh- Mary Elizabeth and leen Burke Hale are in the midst of pre preparations preparation's par at ions ion's for Thanksgiving Trying to forget forget forget for for- get the price of butter and the amazing cost of turkeys the Hales are getting ready for the big day and Mrs Hale p passed sed along to us a specialty of hers called fresh cranberry salad One package cherry Jell O you may substitute two cups canned cherry juice congealed with gelatine 2 cups fresh uncooked uncooked uncooked un un- un- un cooked cranberries 2 cups fresh u un uncooked n c coo o o k ked e d apples 1 grated orange rind 2 tablespoons fresh orange juice This makes up part of liquid to congeal Jell Jell O. 0 1 cup sugar Grind fresh cranberries and chop apples Allow Jell O to partially set then add fruit Turn rum into individual molds or ora ora ora a salad ring Garnish with whipped cream and salad dress dress- ing Sprinkle with chopped wal wal- nuts We Ye were carried away by thoughts of delicious cranberrIes cranberries cranberries ries and dug up a slew of tempting tempting tempting tempt tempt- ing recipes based on that wonderful wonderful wonderful won won- fruit Following are a afew afew afew few of the special ones Sugar No-Sugar Cranberry Meringue Pie Two cups orange marmalade 2 apples peeled and sliced 3 cups fresh cranberries 2 tablespoons tablespoons tablespoons table table- spoons cornstarch 2 tablespoons cold water 1 baked pie pic shell 9 inch 2 egg whites 3 tablespoons tablespoons tablespoons table table- spoons corn syrup Heat marmalade add apple slices and cook gently for tor 3 to four minutes Add cranberries continue cooking until cranberry skins pop open open about about 10 min min min- utes Blend cornstarch and w water ter to a smooth paste pastel add to cranberry JT mixture cook cooki stir stirring stirring ring constantly until filling is slightly thickened and clear Cool pour into baked pie shell Beat egg whites stiff gradually adding corn syrup while beat beat- ing Pile meringue in ring around edge of pie bake in in slow oven degrees F. F until golden golden about about 15 minutes Cranberry Catsup Two pounds fresh cranberries cranberries cranberries ries cup vinegar 2 cups water 1 14 cups brown sugar 1 cups dark corn syrup 1 teaspoon teaspoon teaspoon tea tea- spoon cinnamon 4 J teaspoon cloves teaspoon salt Cook cranberries vinegar and water together until all the cranberry skins pop open Put through fine sieve Combine with remaining ingredients and cook together five minutes Seal in hot sterilized jars Cranberry Fruit Sauce t f Two cups sugar 1 cup water vater 4 cups fresh cranberries 2 peeled apples sliced thin 1 inch 2 stick cinnamon grated rind 1 orange grated rind 1 lemon Bring sugar and water to boiling boiling boiling boil boil- ing point add remaining in in- in Cook slowly without without without with with- out stirring until cranberry skins pop open and apple slices are arc clear clear IO 10 to 15 minutes |
