Show THREE WAYS TO MAKE COFFEE American French and Arabian Methods Meth-ods of Preparation AMERICAN COFFEE Real American Amer-ican coffee supposedly made In the colonial coffee urn Is usually first boiled In the wellknown agate coffee pot A little of all the different recipes re-cipes goes to make this coffee First the coffee bean from across the seas then a little chicory sometimes and an eggshell or a whole egg to clarify the mixture which Is boiled up and then settled wtlh a few drops of cold water After that It Is poured into the elaborate urn as If It had been made there FHENCH COFFEE The most perfect per-fect French coffee Is made In tho steam coffee pot a tall brass affair with two receptacles The lower one Is filled wtlh water The water Is heated by a small lamp and the steam generated rises to the coffee and Is condensed In the upper receptacle and comes back again filled with the delicate aroma of the coffee None of the flavor is allowed to escape and the steam coffee Is said to be tho strongest and most delicious made anywhere ARABIAN COFFEE Tho Arabian coffee Is delicious In flavor due to the freshly roasted coffee berries and to the presence of cinnamon Tho coffee cof-fee Is roasted freshly every day After It Is thoroughly ground up or pounded It Is passed through a sieve and only tho fine brown flour Is used Two teaspoonfuls of this flour are used with two cups of water and boiled together with a little piece of cinnamon It Is boiled then allowed to cool off and then boiled again until un-til it forms a thick paste then half a cupful of boiling water Is added and tho coffee Is drunk In this semi thick state without sugar or milk |
