Show NOW MAKING BUTTER TESTS Plun Is on by Government and .State to Better Creamery Conditions. G. M. Lambert of the dairy division of the United States bureau of animal Industry, In-dustry, working In co-openitlon with the slate dairy and rood commission of Utah, has Just completed a series of educational tests of butter manufactured ln Utah. Samples of butter were bought on the , Salt Lake market, representing sixteen ! creameries of the state. The butter has been scored from an educational standpoint, stand-point, with the Idea of assisting the creameries to Improve the quality of. their butter. The highest score made was 911 and the lowest was SG per cent, which Is considered consid-ered low grade. Personal, letters are being be-ing sent to each of the creameries from which samples were ontalned, giving advice ad-vice on methods for Improvement. Tho official score card was used as a guide. It allows 15 points for Hnvor, 213 points for body or texture, 15 points for color, 10 points for salt and 5 points for packing. |
