' "Goodbye T urkey" Turkey Supreme Vi Casserole c cooked turkey, cut in small cubes 13 c ripe olives 1 T pimento, chopped 1 T onion, minced lit salt Va t paprika I c thick white sauce 3 T butter or margarine 3 T flour Vi t salt 18 t pepper c turkey broth c light cream 2 egg yoks, beaten 2 pkgs. frozen asparagus, cooked 1 c grated Swiss cheese 12 slices cooked turkey Combine turkey, olives, pimento, salt, paprika and white sauce. Chill while making biscuit dough. Melt butter in a saucepan. Stir in flour, salt, andpeppeL Gradually blend in turkey broth and cream and stir until smooth. Cook over low heat, stirring constantly, until thickened. Add the hot mixture a little at a time to the beaten egg yolks. Return mixture to saucepan. Add the cheese and cook over very low heat, stirring constantly, until cheese is melted. Place asparagus on an oven-proplatter. Arrange turkey slices over asparagus. Cover with sauce. Bake at 350 for 0 minutes. Add milk; stir while cooking until thickened. Pour rice directly from box into shallow baking dish. Combine broth with remaining salt and pour over rice. Top with asparagus; add turkey. Pour on sauce. Sprinkle with remaining cheese. Bake at 375 F. for 20 minutes. Top with almonds. Yield 6 servings. BONELESS TURKEY ROASTS Dough 2 c sifted flour 3 t baking powder 2 c sifted flour 3 t baking powder H t salt Va c shortening Vi c grated sharp cheese 2 T minced green pepper 2 T chopped pimento 94 c milk Sift dry ingredients and cut in shortening to resemble fine commeal. Add cheese, green pepper and pimento - mix well. Add milk all at once and mix with fork to soft dough. Roll dough into squares about Va inch thick. Spread each square with soft butter. Spread the turkey mixture evenly and not too near the edges. Roll like a jelly roll. Place on greased baking sheet with seam on center bottom. Prick top with fork. Bake at 450 about 25 to 30 minutes, until nicely browned.
