Meat loaf is a year-round favorite that provides almost unending variety in flavors . . . the more recipes you have the better. Here's a dressed-up version, fine for guest dinner or buffet supper. sup-per. The stuffing of canned pineapple tidbits and sweet potatoes lends a delicious flavor and keeps the loaf moist in the baking. Eound out the menu with a molded salad and a favorite dessert. STUFFED HAM LOAF pound ground ham Y2 teaspoon salt. , V2 pound ground beef 2 tablespoons brown sugar cup fine dry bread crumbs Dash allspice, cinnamon V2 cup milk . IY2 cups drained pineapple tidbits 1 egg . '1 cup mashed sweet potatoes I Mix ham, beef, crumbs, milk, egg and salt. Spread on waxed paper In oblong about 6 x 10-inches. Stir brown suar, spices and cup only pineapple into sweet potatoes. Spread over meat and roll carefully care-fully like a jelly roll. Lift by waxed paper into shallow pan. Bake in moderate oven (350 F.) 1 to Vz hours. Decorate loaf with remaining re-maining cup pineapple as shown. Sprinkle fruit lightly with brown sugar and run under broiler a few minutes to glaze. Serves 5 to 6. Buffet Party Loaf: Double these amounts to serve 10 or 12 and cook about Yt hour longer. |
