She has worked hard for six years to ear this, attending meetings, setting and reaching goals, and completing service projects. Ebner-Eschenba- Aurora girl is state winner; will enter national contest Kandace Boswell, 4 year-ol- d daughter of Leslie and Kelly Boswell, Aurora, was Utahs 1st place winner in Barqs Root Beer National Halloween Costume Contest. Kandace won 2nd place in the local contest, sponsored by Barretts Foodtown, and her picture was then submitted to the state contest for judging. Kandaces costume was a poodle. Her mother says it was the easiest costume she ever made - just gluing some cotton balls to clothing. Kandace wins $500 and a 35 mm camera for her win at the state level. It is also a part of the program of a gardener to preserved and store away some of the fruits of his or her labor. Whatever the reason a person has for storing some food beyond their immediate needs, there must be some planning to avoid waste. There are a number of approaches to building up a food storOne of the major age program. reasons for not having food storage is the expense involved. A simple way to avoid a large cash outlay is to purchase double the items on the grocery list with each shopping excursion. The extra items are then marked with the purchase date and put into storage to be rotated out and replaced on the next shopping trip. Perishable items such as fluid milk or eggs are difficult to work into this system. Therefore substitutes such as nonfat dried milk may be purchased for storage. Keep in mind that there is a limit to the length of time even these or dehydrated items can be stored. The U.S. Army recommends that if the temperature of your primary storage area in 70 Fahrenheit, to avoid significant quality loss, most foods should not be stored for more than three years. IF your storage area temperature is 40 degrees or lower, items can be stored up to six years without significant loss or nutritional quality or palatability. Another approach to beginning a food storage program is to use a lump sum of money such as a tax refund or bonus check to purchase a large amount of basics for your family. The pamphlet Essentials of Food Storage has suggested that basics should include wheat, sugar or honey, salt and nonfat dried milk. Though it is true that these items store well, it is important that the family will use what is stored. This list could be modified to include grain products such as wheat, white flour, pasta products, rolled oats, rice, dried beans, split peas, lentils and other dehydrated fruits and vegetables. Cracked or whole wheat products dont store will as the membranes keeping the oil in the wheat germ away from the iron and other minerals in the endosperm and the bran layer is broken and rancidity will occur at a rapid rate. Rolled oats are heat treated which destroys the lipase enzyme and therefore will store quite well. Add to this fresh and canned fruits, juices and vegetables and items from your freezer and you have adequate calories to maintain life and function. Fluid needs are about two quarts per person per day for drinking and two quarts of water for personal hy giene. Where should I store? Ideally food should bestored where it can be kept cool, dry and in the dark. Insect infestation can be prevented by a policy of quarantining food for a two week inspection period before plac- ing it in the food storage area. Metal or heavy plastic food grade contain- ers will discourage rodent and insect infestation. How Long should I store? Foods are made up of chemicals, and chemical reactions occur in proportion to temperature. The cooler your storage area the longer food quality will be maintained. Conditions in most home storage areas suggest that most foods not be stored more than two years. Like preparing for a career, a food storage program requires planning. Two Utah events named in top 100 events in nation Two Utah events have been selected among the best in 1993 by the American Bus Association. The Mormon Miracle Pageant, Manti, in July, is the story of how the Mormon Pioneers settled Sanpete County, and the difficulties they encountered. The pageant attracts thousands who find a good patch of grass on the south side of the Manti Temple to watch the presentation. The other event is the 250,000 Christmas lights illuminating Temple Square during the holiday season. Thousands of people attend the annual event, which, for many, officially starts the Christmas season.
