The most common reason for this would be that the liquid does not cover the food. This can also show up because foods were not processed long enough to destroy the enzymes. Why do the green vegetables loose their bright green color after being canned? The heat breaks down the chlorophyll, the green coloring matter in plants. Why do I have dark crystals in the bottom of the jars of grape juice I have canned? They are caused by tartaric acid which is found naturally in grapes. Straining the juice before you use it will remove these crystals and it will be perfectly safe to drink. The fruit I have canned floats in the jar, can this be prevented? This happens because the fruit is lighter than the syrup. To prevent this use firm, ripe fruit. Heat fruit before packing it. Use a light to medium syrup. Why is it necessary to use the correct recipe when home canning? When canning, use only recipes that have been scientifically developed and tested for an exact processing time and method. Recipes are developed by food preservation experts for individual foods so sufficient heat is present throughout the food for a specified amount of time to destroy the microorganisms that would spoil foods or cause illness. Do not substitute ingredients, jar sizes or methods in home canning recipes. Why is canning time so important? Canning times are chosen so that the temperature required reaches all parts of the jar. Never shorten or take shortcuts. Begin counting the processing time only after the water in a boiling water bath canner has returned to a full rolling boil or after the pressure in a steam pressure canner has reached 13 pounds of pressure. academic achievements Tammie Sittre dead -- The Utah Department of Health wants to reward motorcyclists whose lives were saved because they were wearing helmets.
