These recipes use creamy-tastin- g low-calor- ie part-ski- . ricotta m instead of cream (dairy-ric- h milk protein instead of butterfat), new sweeteners instead of sugar and such thickening aids as gelatin or cornstarch instead of lots of egg yolks. Once youve tried these basic recipes, youll want to experiment with the variations and create some of your own. PINEAPPLE CREME 1 8 envelope plain gelatin ounce can crushed unsweetened pineapple (not fresh or frozen) -- three-quarte- 5 3 rs cup boiling water ice cubes -envelopes sugar-fre- e vanilla milkshake mix In blender or food processor container, sprinkle gelatin on 2 tablespoons pineapple juice from canned pineapple. Wait 1 minute, then add boiling water. Cover and blend until gelatin (scrape sides of container with rubber scraper). Add pineapple, including remaining juice; cover, blend smooth. Add ice cubes 1 or 2 at a time; blend until low-calor- Add vanilla milkshake mix and blend until mixed. Mixture will be cool and starting to set. Refrigerate 1 hour or more until mixture is fully set. Makes 4 servings, 95 calories each. RUM PINEAPPLE MOUSSE: Add 2 tablespoons dark rum to the water before boiling it (which evaporates alcohol calories). Or, add 1 teaspoon rum flavoring (or to taste) to the finished mixture before chill10 ing. Approximately additional calories per serving with rum. BANANA PINEAPPLE PARFAITS: After mixture is set, whip it briefly, using wire whisk or electric beaters. Layer the mixture in 6 parfait glasses with 3 small thinly sliced very ripe bananas. Sprinkle with cinnamon, if desired. Makes 6 servings, 105 calories each. BANANA PINEAPPLE GINGER WAFER PIE: Arrange 6 or 7 ginger wafers in the bottom of a cake or pie pan. Prepare the recipe as directed using the egg yolk. Beat egg white with the salt until stiff; fold into chocolate mixture and chill until set. Makes 5 servings, 75 calories each. JAMOCHA RUM MOUSSE: Add 2 tablespoons dark rum to the water to be boiled. Boil 1 minute and use in the recipe as directed. Or, substitute 1 teaspoon rum flavoring for the vanilla. Makes 4 servings, 110 calories each. CHOCOLATE vanilla extract In blender or food processor, combine egg, gelatin, cornstarch and cold water. Process until moistened. Wait 1 minute, then turn on blender or food processor, add boiling water through lid opening. Process until gelatin granules are melted (use a rubber scraper to scrape sides of container). Add instant coffee and cocoa; blend until mixed. Add ice cubes, a few at a time; process until melted. Add ricotta, salt, sugar substitute and vanilla; process until completely smooth and Chill until set. beat (If desired, lightly just before serving for a creamier texture.
