But quickly became as American as Apple Pie. In 1930 Ruth and Kenneth Wakefield bought the Toll House Inn. Ruth would prepare pre-pare daily fresh baked goods for guests. At one point, Ruth ran out of bakers chocolate for her famous chocolate cookies. She decided to replace this one ingredient with semi-sweet bars that the Nestle family had given her. But much to her surprise the chocolate held it's shape and thus the Toll House Chocolate Chip Cookie was born. Some cooking mishaps turn out to be the best recipes. This week I had a question ques-tion from Pam, a reader who would like to know why her Chocolate Chip Cookies always al-ways turn out flat and thin. There are a couple of hints that I can give to you. The cookie recipe you are using may be the result of your unhappiness. Let me inform you of a couple batter basics to look for when searching for your Chocolate Chip Cookie recipe. t Cookie's made with butter will spread out and become flat because butter melts at a lower temperature than margarine or shortening. This causes your cookie to spread slowly and 1. Using only white sugar will make your cookie crispy. Using Us-ing a mix of white and brown sugars will produce a chewier cookie, even more so if you use another kind of fat such as shortening or margarine in place of butter. I Dough that is soft and warm will spread much faster than dough that is chilled. I Greasing your cookie sheet is nice only in the fact that it helps your cookie from sticking stick-ing to the pan. But, greasing your cookie sheet makes your cookie cook faster, causing your cookie to spread quickly and become crisp. I would suggest never greasing your baking sheets and using parchment paper instead to line your pans. I Last, but not least, never take a batch of cookies out of the oven and reuse the same hot cookie sheet. Always use a cool cookie sheet to place your uncooked dough on. Your dough will become flat instantly if your baking sheet is hot. Always place your cookies on a cooling rack when you remove them from the oven. This will prevent . your cookie from "sweating" on the bottom and giving your cookie a texture that is not consistent.
