Show rw S, I 2B Lakeside Review North, Wednesday, Aug. 17, 1983 Goodies Great for Summer T reats No-Ba- ke LAYTON August heat certainly can discourage mothers from making homemade treats for summer afternoons, especially when kids are asking for homemade cookies which require hours to bake and add heat to an already hot house. e . cookies can offer the fun and delicious taste of homemade without all those minutes of oven baking for each batch. Many are so simple that even the youngest of beginning cooks can try their hand at them but many are company special too. Most require some stovetop cooking but only for a limited time so the heat buildup isnt nearly as great as for those recipes calling for baking. Some require chilling for several hours pr overnight so plan ahead. 2 cups powdered sugar 1 tsp. vanilla or lemon extract until creamy. Combine egg, sugar, milk, and melted butler. Cook, stirring constantly, until mixture boils. Remove from heat and add ' coconut, nuts, and cumbs. Spread over crackers in pan and immediately place remaining crackers on top. Frost with topping and chill for several hours. Cut into bars. I c. 1 c. 1 c. 6 c. 1 c. 1 c. 1 cup 1 semi-swe- ows cup evaporated milk cup chopped nuts cups miniature marshmall- sugar light corn syrup peanut butter rice krispies chocolate chips butterscotch chips Combine sugar and syrup in a 3 quart saucepan. Cook over moderate heat until it begins to bubble. Remove from heat and stir in peanut butter. Mix well. Add rice cereal and stir until well blended. Press into a well buttered 9x13 pan. Melt chocolate chips and butterscotch chip's together, stirring until well blended. Spread evenly over cookie mixture. Cool until firm. Cut into bars. 1 ke crumb mixture and mix until all crumbs are moistened. Turn into a well buttered 9x9 square pan. Topping cube butter 4 Tbs. cream 1 ' cup cocoa 2 cups sugar ' 'h cup butter Vi cup milk 1 tsp. vanilla 3 cups oats 2 cups coconut Mix cocoa, sugar, butter, 4 dozen : tsp. in. cup Spanish peanuts and cups of chow mein noodles. 1 Drop by heaping spoonfuls onto waxed paper, Place in refrigerator to set up. Makes about 42 clusters. Date Wheat Flake Balls cup butter cup sugar 2Vi cups pitted and cut up dates Vi V 1 cup chopped nuts 4 cups whole wheat flake Cool to room temperature. Mix -2 salt tsp. vanilla Vi Haystacks 1 I tbs. milk 1 ' 1 w,i occas Chocolate Cookies 3-- 3 1 nuts, marshmallows, crumbs, and sugar in a large bowl. Pour chocolate over 1 1 tbs. water pkg. (15.4 oz.) lemon frosting mix h cups flaked coconut Vi cup slivered almonds Jn top of a double boiler melt butter in water. Stir in dry frosting mix and blend until smooth. Heat over rapidly boiling water for 5 minutes, stirring occasionally. Remove from heat and stir in almonds and coconut. Drop by spoonfulls onto foil or waxed paper. (Keep mixture warm, stirring occasionally, while dropping.) Let cool until smooth. Mix set. Makes Melt 2 packages butterscotch chips in top of a double boiler. 2 tbs. butter small saucepan. Cook, stirring constantly, over low heat until chocolate is melted and sauce is 1 No-Ba- Lemon Clusters 4 cups Graham cracker crumbs crushed or corn puffs cereal 1 cup confectioners sugar Add chocolate to milk in a 2 1 chocolate et Press down into an even layer. Cook ever low heat, stirring butter melts. Remove from heat. Mix egg, milk, salt, and vanilla. Add to date mixture. Cook over very low heat, stirring constantly, about four minutes, until dates are soft and have blended in with rest of ingredients. Remove from heat and stir in nuts. Cool 5 minutes and then add cereal. As soon as mixture is cool form into balls and roll in nuts or coconut.
