RIGATONI pounds hamburger cooked and drained 1 Tablespoon salt 2 buttons of garlic, chopped 2 large onions, chopped fine 1 green pepper, chopped 3 stalks celery, chopped fine 2 quarts tomatoes 2 cans tomato sauce 1 can tomato soup 2 packages Lowry Spaghetti seasoning in packages 1 can mushrooms (optional) Vi tsp. allspice 2 tsp. chili powder 1 tsp. cumin MIX ALL ingredients together and simmer for 30 minutes. Cook two packages of Rigatoni. Put in shallow pan and make layers of noodles, then sauce, sprinkled with Parmesan cheese. Top with cheddar cheese. Put in oven and bake at 350 until cheese bubbles through. Geri enjoys cooking. She prepares large dinners for her extended family of married children and 18 grandchildren on special holidays, Sundays and just anytime. A talented poet and writer, Mrs. Harris continues with her thoughts about home with these lines, But one by one, they grab a sandwich and a glass of milk or they slip a frozen pizza into bake. And each in their own hurried frenzy swallows whole their great big piece of cake. Oh, give me back the good old days When families used to come and eat around the table at the setting of the sun. Oh, give me back the good old days When the daily work is done And the family gathers round the table in the attitude of one. GERI HARRIS has been a Layton resident since 1945. She moved with her family from Ogden and settled on the Mountain Road. After her marriage to Edison G. (Ted) Harris, she moved to the Antelope Drive and Hill Field Road section of the city. Homemaking is the most important thing in her life. Her talents have been developed through working around her home and they have extended into the church community and into the neighborhood. HARRIS considers herself to be a good pie maker. Those who have eaten her specialities says she is more than good. She is an excellent pie maker. When Geri prepares pie crust, she makes up to 25 to 30 at one time. Some of the crusts are cooked and stored in a cool place between layers of waxed paper. When she needs a pie, all that is necessary is to prepare a filling. The crust is ready to do. Geir also stores unbaked pie crusts between layers of waxed paper in the freezer. THE FOLLOWING four recipes are some of Geris favorite dishes. She serves the green rice with her Swedish meatballs. The Rigatoni goes over big when the family travels to Bear Lake to stay in their cabin.
