FOR THE first time in the history of the Defense establishment, alcohol abuse Is recognized as a disease. In another major step, the Department of Defense also recognised that the use Or abuse of alcohol in itself should not lie grounds for disciplinary action if the individual meets military standards of liehavior and discipline and accepted standards of social conduct. At the same time, tlie new Defense Directive puts the responsibility for prevention and treatment of alcohol abuse squarely on the shoulders of the individual A man or woman who realizes there ' is a problem, seeks treatment, and actively participates in rehabilitation will not lie punished because of his or her abuse of alcohol. Add the tomato paste a can at a time and adding 3 cans of warm water to every can of tomato paste. Stir the mixture well lietween additions of tomato paste. Reduce heat until mixture is just simmering. Add chopped onions, garlic and sliced mushrooms, stirring well lietween each addition. Add all condi merits and bay leaf, stirring them in well. Simmer while covered very gently for 8 hours with intermittent stirring. Additional salt or pepper may ta added to taste if desired. If sauce appears to lie too thick, water may ta added to thin the mixture; or if sauce appears to ta too watery, tomato paste may ta added to thicken as desired. Completed sauce should, however, ta quite thick and rich appearing. Spices and ta used condiments should gently in order not to overpower die mushrooms. After the simmering period, permit the sauce hours to stand covered for 24-to permit flavors to properly saturate the sauce. Reheat to simmering when desired for used. Makes approximately 214 quarts of sauce. The remainder can ta frozen and kept indefinitely for the next time. full Fill a 3 quart pot of cold water, adding 2 Tsp. salt and one pat of tatter and place over medium heat until it has reached a rolling tail.
