Show Gordons Larsens Return From Arizona Tour Enjoy Sunday, Pearl and Earl Perry for a double birthday dinner with their daughter, husband and family, Erlene and Wil Hedrick. Set aside. 2 tablespoons butter (melt in sauce pan, then add 2 tablespoons flour (stir until thick and creamy) 4 teaspoon salt 4 teaspoon pepper Cook slowly, stirring constantly. As sauce thickens, add: 4 cup onion juice (about) 2 beaten egg yolks 2ft cup light cream (half and half) Then mix in more cream and onion juice until it is the ' right thickness of sauce you want. Then put the onions in a casserole dish and pour sauce over onions. Sprinkle with lots of buttered bread crumbs. Mi inch thick. For crumbs, use at least 14 cup dried bread in blender and melt butter on stove in sauce pan. Stir together (butter and bread crumbs). Then sprinkle 4 cup slivered almonds. Sprinkle parmesan cheese on top. Bake in 300 degree oven for 30 minutes, uncovered. Can be made ahead and put in refrigerator. If so, bake longer. It is just as good warmed over. Sauce is great for vegetables, also good with ham. Mr. Bullen has a machine shop, tool and die, and is employed at Utah Power and Light Company. They live at 155 West Second South, Richmond, with their family. They have two married daughters, Shanna, married to Mark Gibbons, and they live in Richmond; and Linda, married to John Laird of North Ogden. They, the Lairds, are both juniors at USU. At home are Michael, 15, a sophomore at Sky View High School, and Cindy, 12, in seventh grade. Then there is Tina Marie, eight, in the third grade at Park School. Lastly is Hollie Ann, who was five in December. The family likes to snowmobile and water ski. Hollie rides the surf board. Thev eniov camping in the mountains. The whole family likes to sing. Michael plays the guitar; Linda was in the Front Porch Majority and was in all the musicals while she attended Sky View. Mr. Bullen and Linda and Shanna formed a trio and have sung all over the valley. Hollie plays the piano. Mrs. Bullen likes to sew, cook, water ski, garden (has one every year), crochet, knit, quilts, makes sweaters and afgans. She has made 11 quilts in the past three years. She is the ward librarian in Richmond South Ward, is assistant work director in Relief Society, has been chorister and organist in the Primary for 134 years, was released eight months ago. She also works in the stake library. Her husband is chorister in priesthood and has just been released from the Elders Quorum presidency. He was first counselor. She also noted that Michael is president of the Teachers Quorum and Cindy is first counselor in the Beehives. Her four favorite recipes follow: ' . ' GERMANS SWEET CHOCOLATE CAKE (4 ounces) Baker's German chocolate cup butter or margarine 4 egg yolks, unbeaten 24 cups cake flour 1 teaspoon baking soda 4 egg whites, stiffly beaten 4 cup boiling water 2 cups sugar 1 teaspoon vanilla 4 teaspoon salt 1 cup buttermilk Melt chocolate over boiling water. Cool. Cream butter and sugar until fluffy. Add egg yolks, one at a time, and beat well after each. Add melted chocolate and vanilla. Mix well. Sift together flour, salt and soda. Add alternately with buttermilk to chocolate mixture. Beat well. Beat until smooth. Fold in whites. Pour into 3 deep 8 or 9 inch layer pans, lined on bottoms with paper. Bake in moderate over (350 degrees 30 to 40 minutes. Cool and frost tops only. bar 1 1 CHICKEN DRESSING CASSEROLE Take one large fat hen cut into pieces as you would to try and place in a pan and cover with water. Add 1 teaspoon, salt, 3 carrots and 3 sticks of celery diced. Cook until tender. Remove the vgetables and throw them away. Remove the meat and set aside to cool. 6 or 7 cups. Take 1 loaf of white bakers bread (one day old), 1 half loaf of homemade bread, either brown or white. Break into pieces as for dressing. Add 1 teaspoon salt, a pinch of pepper, some poultry seasoning and sage to taste. I use about 3 or 4 leaves of sage and crumble them. Toss and set aside. Dice two medium onions, 3 or 4 sticks of celery and fry in a chunk of butter until golden brown. Add to bread crumb mixture and toss. Set aside. When fat has come to top of the broth, take it off. Y ou should have one hill cup of fat. If you do not add enough butter to make one cup. Set aside. Now take 4 or 5 tablespoons of the broth and sprinkle over Inread crumb mixture two at a time. Toss, this will keep the bread from getting dry. Next, cut the meat up in small pieces. Line the bottom of 3 oblong pans, 2 large and 1 small, with bread crumbs. The bread crumbs should come about 4 up the pan. Do not pack, just let it sit lightly. Then add a layer of meat. (Divide the meat and crumbs between the 3 pans. Use all of each. Do not stir. Set aside. Thickening: Add one cup of milk to remaining broth. Bring it to a boil and thicken with the following: 1 cup of chicken fat saved from step 1. No more than 1 cup of flour and 1 teaspoon salt. Mix as you would for gravy, using a little of the broth. Pour it in the broth and boil. Do not get it too thick, about like gravy. Let it cool until just a little steam is left in. Add 3 or 4 egg yolks, according to your taste. Pour this gravy over the prepared dressing and chicken. Do not stir. Use all of the gravy. Serve at one. Or you can freeze part of it to be used at a later day. Makes 2 large oblong pans and one smaller one. P.S. The fatter the chicken, the better the dish. When you add the egg yolks, mix a little of the broth to the yolk first so you don't cook the-eg- attended horse sales.
