CRAB MOUSSE 1 envelope geletin 8 oz. cream cheese 1 can cream of mushroom soup 12 cup finely chopped celery I cup chopped green onions 1 cup mayonnaise 1 can (8 oz.) crab meat Dissolve geletin in 14 water. In large heavy pan over low heat add soup and cream cheese; melt until un-til smooth, stir in geletin. Add celery, green onions, mayonnaise and crab (you can use fake crab if desired.) Mix and put into oiled mold and chill. Serve with crackers. Shrimp mousse: add 8 oz. can of shrimp and cream of tomato soup instead of mushroom. ORIENTAL ONION DIP 1 cup sour cream 1 envelope beef-flavor bouillon 14 cup green onions, thinly sliced 2 tbls. fresh coriander leaves, chopped 1 tbls. gingerroot, grated and peeled 1 tsp. soy sauce 1. In small bowl with spoon, mix all ingredients. Cover and refrigerate the dip if not serving it right away. 2. Spoon into serving bowl and use as dip. RAISIN-WALNUT RAISIN-WALNUT STUFFING 2 cups diced celery 12 cup chopped onion 1 cup butter 3 12 qts. grated bread crumbs 2 cups raisins, rinse with boiling water 112 cups walnuts, chopped chop-ped 12 cup parsley, chopped 2 tsp. poultry seasoning 2 tsp. salt 14 tsp. pepper 1 cup dry table wine Saute celery and onion gently in butter for five to ten minutes. Add bread crumbs, raisins, walnuts, parsley and seasonings. Mix lightly, but thoroughly. Gradually add enough wine to moisten stuffing nicely. Makes enough stuffing for a 12- to 14-pound turkey. CHEDDAR-CHEESE FONDUE 2 cups half-and-half 1 tbls. Worcestershire 2 tbls. dry mustard 1 garlic clove, halved 112 pounds mild or sharp Cheddar cheese, shredded (about six cups) 2 tbls. all-purpose flour French bread, shrimp, or cooked ham chunks 1. In fondue pot or saucepan over low heat, heat half-and-half, Worcestershire, mustard, and garlic, stirring, until hot but not boiling. Discard garlic. 2. Meanwhile, in medium bowl, toss cheese with flour. Into hot mixture with fork or wire whisk, gradually stir in cheese. Cook over low heat, stirring stirr-ing constantly, until cheese is melted and mixture is smooth and bubbling.
