Show TUESDAYDAVIS COUNTY CLIPPER, JUNE 10, 1986 Stumped on dessert ideas? Try these By KATHRYN JENNINGS Billy, Barbara Hesterman and Emily, have several specially luscious desserts ready to serve. T hey will be preparing these treats for Fathers Day and other fathers may enjoy them too. Billy Hesterman and cousin Emily are grandchidlren who love to visit grandmother and have some of the delicious treats that she always has on hand. There is an elegant lemon cream pie. a really luscious cheese cake, circled with red ripe strawberries, a strawberry parfait pie and a chocolate pudding cake dessert. Mrs. Hesterman suggests preparing one or more of these tempting desserts when the day for all father will celebrate their day, June 15. Any father would love to be served one of these special desserts for his day, or in fact for any day. LEMON CREAM PIE 'A cups sugar 'A tsp. salt 6 Tbsp. cornstarch I ': cups boiling water 3 eggs, slightly beaten 1 6 2 I Tbsp. lemon juice Tbsp. butter or margarine cup whipping cream, whipped, sweetened baked 9 inch pie shell Combine sugar, salt, cornstarch, or three quart saucepan. Blend well and add boiling water and place over heat, stirring rapidly until smooth and thick. Bring to a full rolling boil so cornstarch will be thoroughly cooked. Remove from heat. in a two With a wire whip, vigorously whip the filling until it is very smooth and creamy in texture, this is a very important step. Remove from heat and add lemon juice, beating in with a wire whip. Add butter and stir to blend. Pour filling into baked pie shell and chill. When ready to serve, top with whipped cream. BAKED CHEESECAKE cup margarine or butter, 'A melted 1 'A 2-- cup graham cracker crumbs cup sugar 8 tened oz. pkg. cream cheese, sof- oz. can Eagle Brand sweetened condensed milk 3 eggs A tsp. 'A cup PUDDING CAKE DESSERT 23 cup flour softened 13 cup nuts, optional oz. pkg. cream cheese softened cup powdered sugar 4h oz. pkg. Cool Whip pkg. 3A oz. instand chocolate pudding pkg. 3 'A oz. instant vanilla pudding 2'h cups milk Another 4'h oz. pkg. cool whip 6 Tbsp. margarine, 1 1 salt ReaLemon reconstituted lemon juice oz. container sour cream Preheat oven to 300 degrees. Combine margarine, crumbs and sugar, mixing well. Pat firmly on the bottom of a buttered 9 inch springform pan. In the large mixer bowl, beat cheese until fluffy and then beat in Eagle brand milk, eggs, and salt, beating until very smooth. Stir in lemon juice and pour into the prepared pan. Bake for 50 to 55 minutes or until cake springs back when lightly touched. Cool to room temperature then chill well. At serving time, spread sour cream on cheesecake and garnish as desired. STRAWBERRY PARFAIT PIE oz. pkg. strawberry jello cup hot water pint vanilla ice cream I pkg. 10 oz. frozen strawberries, thawed baked pastry shell, cooled Dissolve jello in the hot water. 1 Add a little of the hot pudding to the eggs, while stirring rapidly. Return egg mixture to hot pudding and reheat, stirring constantly, just until smooth. stir to mix well. Add ice cream that has been cut into chunks. Stir until melted and chill mixture in refrigerator until it begins to thicken and mound, when stirred with a spoon. Gently fold in the thawed strawberries, Pour into baked pastry shell and chill until firm, at least 45 minutes. Garnish with sweetened whipped cream and serve. 1 1 Combine flour, margarine and nuts and pour into a 9x9 inch baking tin, patting firmly on bottom of pan. Bake at 350 degrees for 15 minutes and cool. Mix cream cheese with powdered sugar and cool whip and beat until smooth. Spread over baked crust. chocolate pudding and the vanilla pudding with the 2'h cups milk and beat until the thickness for a pie filling. Pour mixture over the cream cheese layer and let Mix the set until firm. Spread the last 4h oz. cool whip over the top, tinting it delicately pink, if desired. Garnish with shavings of plain chocolate bar. This dessert is really better if made the day before it is to be served. You can choose from lemon cream pie, baked cheesecake, strawberry parfait pie' or chocolate pudding cake dessert. Hesterman is self employed in Salt Lake City and the family lives in Bountiful. One son Mark attends the University of Utah and lives at home. There is a daughter Kristy H. and husband David Moffat, Salt Lake City and daughter Lori H. and Blaine Smith, Salt Lake City. There are eight grandchildren. The entire family follows traditions of long standing. They all love going to Lake Powell and being together for a vacation on their house boat there and of course they water ski. The family also enjoys getting together to celebrate birthdays, anniversaries and any special occasion, just getting together is a pleasure. The ladies love to get together for lunch and share new recipes. TheateFreview The King And is a production I not to be missed By TOM HARALDSEN When Triadtheatre announced its reorganization and reopening for the outdoor summer season, it was great news for both local actors and playgoers alike. And even better, its summer season of plays such as "The King and I, "West Side Story and "Music Man were appealing faire for those they hoped to reattract. The first production, The King and I, has always been one of my favorites, and the Triadtheatre version is sure to please those who love the play as I do. Aside from a few weaknesses, the production, which runs nightly except Sunday at 8:30 p.m. through June 21, is a good one. Robert Peterson plays the King, a role which I felt he might have trouble with because of his operatic experience. But Peterson has found the way to "back off the powerful singing need for the opera, and handles the Kings songs particularly well. He seems comfortable with the part, although unfortunately small audiences are certainly something which he is not accustomed to. Katie Hill plays Mrs. Anna, a woman with a beautiful voice and the proper stage presence to handle this role for the most part. One noticeable weakness in my mind was her facial color, very pale in comparison to the others in the production (intentionally), but perhaps a bit too pale. My personal favorites in the cast are Stephanie Asay as Tuptim and Pat Jackson as Lady Thiang. Mrs. Asay is particularly beautiful, and is more "believable in hercharac-te- r than anyone else in the show. When she isnt singing to her lover, n local portrayed by well-know- Here are picnic tips By DONETA GATHERUM Because of the increased warm weather and the number of people who w ill be preparing, serving and eating outdoor picnic lunches, the Cooperative Extension Service of USU through JoAnn Mathis, Davis County Extension Home Economist, offers the following tips to safeguard picnic foods. Food poisoning can be prevented if people learn to play it safe and follow these tips. 1. Scrub hands before starting food preparation and between steps. 2. After using knives and other utensils on raw meats, eggs, fish and poultry, clean thoroughly, especially before using on other foods. Failure to clean is one way to spread harmful bacteria. 3. Thoroughly scrub work surfaces after raw meats are cut or where raw meat juices have dripped. 4. Use clean sponges, dish cloths ones and rubber gloves: can spread germs. 5. Refrigerate cooked foods such as chicken, potatoes, and ham as over-use- d soon as they stop steaming. Cooling foods to room temperature be- fore refrigerating encourages bacterial growth.. 6. Refrigerate chill all perishable food before packing. Transport to picnic in insulated containers. 7. Don't hold the mayonnaise; add it to salad and sandwich mixtures during initial preparation. 8. At the picnic, keep foods out of the direct sun. To reduce traffic in and out of the picnic container, pack food to be eaten first on the top of the container. 9. Don't attempt to carry leftovers home. Its safer to discard perishables at the picnic site, dmg actor Jim Miller, she is gracing the stage with her very presence. Mrs. Jackson handles her part as the Kings head wife very well, singing beautifully and never coming away from her character or accent. And there are many other highlights, from the fine jobs done by Jon Humberstone and Michael Affleck as, respectively, Prince Chulalongkorn and Louis: to the performances of the many children used in the production. Sets of Clif Davis are well done, costuming gorgeous (except for one of Anna's gowns, a purple polkadot dress that seemed out of place here), and makeup handled well. Director Pat Davis has, for the most part, done a good job, although some of the songs included in the production that are SPRINGTIME generally left out of the play (and w'ere left out of the movie version of the play) could have been omitted from this one. But there are problems, including some synchronization difficulties between some of the actors and By Nan Jensen the Salt Lake Opera Theatre Orchestra, which provides the musical accompaniment. The nature of the stage at Triad is such that various stagehands can be seen behind the curtain, raising or lowering backdrops, and I found that distracting. And the production seemed to bog down in places, but not seriously enough to take away from the overall enjoyment of the show. My concensus opinion of "The King and I is that it remains a musical not to be missed. Unfortunately, Salt Lake audiences had better awake and come to the party. With Promised Valley Playhouse already banished forever, crowds need to support the e and its productions. A sparse crowd last week has to be seen as a disappointment to theatre owners, and this production deserves better support.
