My sources say alfalfa was grown by man even before recorded history and was probably used as human, not animal, food. This makes sense, as alfalfa is a good source of two-foote- 649-861- 5. Here is the list of programs being offered in July and August: 11 protein, iron, sulphur, magnesium, phosphorous, potassium, chlorine, and sodium. The reason it has so many trace elements that are often lacking in plants is because it has a tap root that sometimes penetrates the ground as deeply as 50 feet. (I guess this is also why it does well in the dry West.) Alfalfa is also a very good source of Vitamin K and several enzymes that help the body absorb shallow-roote- d food. wed do well to try of alfalfa. First all, you can make So I guess wilted alfalfa. Pick, wash, and chop two cups of fresh alfalfa and put it in a frying pan. Put two teaspoons of vegetable oil or bacon grease in the pan and salt if desired. Heat and stir until the leaves are wilted. Eat immediately. Several things can be done with alfalfa flour. The flour can be bought, or you can make your own. To make alfalfa flour, dry fresh alfalfa leaves in a warm room or slow oven until they powder when handled. You can do all of the powdering by hand or use a grain mill on the fine setting. After you have the flour, you can eat it raw, sprinkle it into soup, or make bread. alfalfa-wholewhe- BREAD: cups whole wheat flour cup alfalfa flour 2 cups scalded milk 1 Vfe tbs. bacon grease 1 tbs. salt 6 tbs. molasses or honey 1 cake yeast dissolved in V4 cup lukewarm water with 2 tbs. brown sugar added 5 1 2 Combine all ingredients and stir well. Knead slightly, then place in greased bowl, cover, and put in warm spot until dough doubles in bulk. Place in two greased bread pans and let rise until it doubles again. Bake in 375 oven for 20 minutes - reduce heat to 325 and bake until done - about 80 minutes. If youre looking for a similar project, alfalfa can also be picked and used in salads. One combination is to pick and chop one cup of alfalfa and one cup of white or red clover. Add some sorrel or grape leaves to give the salad tang. Toss with your favorite salad dressing and eat.
