And to support this statement, Mrs. Bardwell conducted about 4 years of special research on venison towards a masters degree. The big difference in venison is the handling its given in the field by the hunter," says Mrs. Bardwell, a nutrition specialist with the Utah State Extension Services. A DEMONSTRATION She was at the Pioneer Daft House the other day to give one in a series of demonstrations on Kitchen Crafts. And she showed positive evidence that venison, properly cared for, can indeed make a delicious meal. Mrs. Bardwell herself loves venison. We have found that women seem to be afraid of venison. They tend to serve it on wash days when only the family is around. They don't treat it like the type of product theyre proud to serve. But her recipes prove that treated venison correctly Of The Emily Post Institute The following letter has been chosen as the prizewinning one for this week. ' Heavy beams and the high pitched ceiling of 1 x 6 tongue and groove cedar contrib showed that fat is what carries the flavor in any meat. Since venison is such a lean meat, youll improve the flavor if you can add a little fat with your ground meat. To other cuts, add a little more seasoning than you do for other meats, to intensify, not camouflage, the flavor," Mrs. Bardwell adds. And if you're one of many who have always believed that fat on venison will give It a bad flavor, Mrs. Bardwell found differently. We tested this and discovered that the fat doesn't have a thing to do with it.
