Show Carotene in Carrots Carotene, the yellow substance In food which is converted into vitamin vita-min A in the body, took its name from the carrot, one of the vegetables vege-tables richest in this valuable material. ma-terial. Not all carrots contain the same quantity of carotene, however. Those that are too young the tender ten-der baby carrots and those too old have considerably less than those in their prime. Tests at the Rhode Is-1 land experiment . station of 10 varieties vari-eties of carrots show that these vegetables increased in-carotene at they matured. They reached a peak of about 6 milligrams of carotene per 100 grams of carrot in about 90 days after planting. After that, they gradually lost carotene. |
