Show interesting PAPER ON THE SUB WHICH WAS TO HAVE BEEN READ BY JUDGE U H AT THE irrigation CONGRESS i chilo it was no reached on apro gram it wai form A part of the official proceedings of the congress by judge henry II 11 kalapp of ogden utah the sugar the most profitable crop thai can be dively grown upon irrigated land it Is ft crop which requires for ita the administration of or the withholding thereof at definite periods during it growth Consequent hrin localities depending upon the mu of lunatic conditions for their moisture ha sugar beet has only been moderately while in the arid regions of utah idaho colorado and new mexico under proper soil and planting conda eions there has never been even a partial failure of tho crop of course the present of sugar feet cultivation in utah and vicinity is not wholly the result of soil and irrigation conditions except as they have been improved by the experience and industry of the fanner in thi state as elsewhere tha earlier cultivation of beets produced a crop deficient both in quantity and quality but as tha carmera became more familiar with tha required boil and irrigation conditions and us they reconciled to tha demanded unaccustomed in tenser farming ot their lands the crop increased correspondingly both in tonnage and sugar contents A this condition becaro apparent to the farmer ha naturally became more favorable toward the cultivation of the crop and year by year tho acreage was increased and consumed by steadily multiplying plants in 1891 leas than one thousand farmers in utah were engaged in cultivation of this crop while at present it id estimated that more than ten thousand heads of families in utah and idaho are producing the beets used liy the factories under the control of utah capital tho culture of sugar awta in ipuh and vicinity as a matter of comparatively recent origin the inception of the industry in this stale may IMS said to have taken place icae than twelve year ago liy the establishment of a beet fai factory tory ly the utah sugar company at lehi in the central portion of this state at hat time not a dingle sugar beet factory had been erected anywhere within the of the rocky mountain territory and ome efforts nad awn made in california toward establishing ahe industry in ho united state yet lip to the organization of tho utah sugar company nothing but failure had resulted from cheso ef forta even in this mate the establishment of a sugar factory was attempted at early as 1852 by john taylor president ot the mormon church who had become acquainted with the culture cf rugar beets during am sojourn in france he went to great expense in happing a email plant and necessary liet eed from europe across abo ocean in tailing eadels easels to yew orleans ami irence had it transported by ox teams herons the great american to lake city tho plant ft as partially freested in what is known as sugar house ward near salt lake city and an at empt made at producing augeri bufa it resulted in absolute failure and subsequent abandonment tha crude condition of the machinery operated by men wholly unskillful in its manipulations coupled with tha poor condition of alie beets resulting from the inadequate method employed in growing aba crop ro discouraged tho brave pioneers of tins that by mutual consent further efforts were made in this durec it can hardly be claimed that this attempt was in any way the commence neni of the sugar industry in this in fact even during the operation or that early plant molares was hK cause they possessed no means of re lining the rvay into crystal sugar and even tha m proved because of tho of knowledge regarding the of extracting tho potash alt coining from iho into the re putting product so that the only advantage resulting from this early attempt was the periodical agitation for ahe establishment of a modern plant operated bv workmen but in ew of this local failure followed by similar failures in california and the coat tant discouraging opposition of the cano sugar interests it became very difficult to interest utah capital in this industry finally hoer the utah sugar corn any wa in 1889 but it took two years ot tho diligent labor upon the part of the prom otwa ot this company before they succeeded in means sufficient to erect their first factory and to purchase need for distribution among reluctant banners fan ners opera aloni commenced however in the fall of 1891 but the urt few years were full of financial and argi cultural disappointments during the first two seasons only about ten thou cand bags of sugar were produced an dually alie extraction 0 sugar from the beet was leia than half the present amount and the cost 0 was more than three talmeg as high at a t at present added to thia came the inauguration of a commercial between alic beet and cane inter cuts in california hian reduced the market arico of aukar to leas than its nominal coat of production the farmers likewise were dideon antl alth the industry the ol 01 the chop had disappointed their ex Meta tiong and a natural prejudice hl been by the unaccustomed re of constant attention and cultivation ti to this exacting novel product of the boil of banners avowed their intention of basina to cultivate the sugar beet and it looked for a time as though the would fail for want of local support at this juncture herculean efforts were mada to interest the fannen in the continua lion of the industry the leading men of this community notably hon thomas PK cutler the manage of the utah inar hen geo cana hon moisa thatcher lion heber J grant and hon arthur stayner were in de fatigable in their endeavors to keen the sugar industry alive they encouraged the banners with words and means they distributed experienced beet agri culturists among the community and they appealed to the patriotism of the whole people for tho exclusive consumption of utah sugar no matter what its beof thea efforts resulted victoriously and gradually the fanner became to well acquainted the proper met nods of cultivating the beets that they vere not only contented but to con tinita thA culture of sugar beets at the same time the factory alto gained elpe tience and gradually acquired cheaper and more efficient methods for alie extraction of sugar until at present the industry ia utah and vicinity in braily and lastingly establish eiL in 1897 lion darn cecle lion D dee diott fred J kichel and a number of other ogden citizens conduced condu ded to extend the sugar industry to northern utah con the ogden fa batory tory having a daily capacity of tons was erected in 1899 and during the balne year these gentlemen also erected a similar factory at la grande oregon it being the only beet factory then and now existing in that state tarco years later sir EC alc and jaia associates erected ton plant at logan utah and all of these establishments are still operating and nave been frodi the corn besides thet theto o establish ments alie sugar company am since multiplied its plants until today they operate two factories and three al dit ional slicing stations the promoters prom otera of this company bavei also established a factory at rails ami intend next to erect an additional one at arc mont idaho the historical infantile inputs and reverses of the utah sugar interests differ little from those ex in other beet sugar states california for instance in 1870 only produced five thousand bags of siar an amount less than a weeks output from oar ogden factory and as late as 1889 the sugar production of nil the combiner factories of california only aggregated gre gated about bags or less than a months output from our ogden plant during the so aued dormant period of the beet augar industry in the united states between the years 1870 and 1887 great financial loss camo to those who had attempted the establish mant of this enterprise and it is in sting to note that not only aud the cane sugar interests attempt to impresa capital with the futility of maintaining beet suar as a profitable investment but the beet interests were temporarily wholly sidetracked by the attempt to extract sugar from other agricultural products thus here in utah for a while we tried unsuccessfully to produce sorghum wi a competitor to cane sugar while in california they as signally failed in an attempt to produce sugar from water melons in all this struggle however the farmer haa never been a serious financial sufferer the price to alie browet of 4 as to per ton of bats was es at a time when sugar sold at 1300 bag in san francisco and U thi date when sugar bella at about one third that amount the price for beefs is still the same thus the agricultural profits of this crop have not only not changed with the decline in the value of sugar but because of the in created quantity now produced per acre tlc alc farmer is today reaping a proportionately tiona tely greater benefit from the sugar industry than are the owners of the fac obries ten years ago five or six ton per acre was an average crop today two or three times that amount constitutes the average while a harvest of twenty to thirty tons per acre is not an uncommon occurrence it had been demon grated that irrigation is a most important factor in this increase but it haa developed in the culture of this crop more so than with any other that irrigation may become a of great danger the natural tendency to cling to any substance of value whether absolutely sol or not has in many instances caused fannery to over irrigate acir crops so far aa tho sugar beet ii concerned this method has not only caused wasteful withholding of benefits from others without any corresponding advantages to the grower but it has had the effect of materially reducing the industrial caliro of the crop it in aery difficult to impress this fact upon the minas of the banners fan ners the factories here at various times resorted to different experiments having for their object the withholding of water from the crops at improper and unprofitable times bufa in this matter there ia yet much to be learned by the farmer desirous of becoming a successful beet producer another thing that we leayo learned here in utah i that as a rule beets are not or profitably raised upon any largo tract of land in this country alie climatic conditions aro euch that but a cry short linw each spring ca be devoted to planting the seed consequently the crop all over the fields reach the thinning stage at about the tame time and ii las proven not only unprofitable but wholly tory to employ temporary Ia borer not otherwise engaged on tha fann to perform this necessary work at the proper and limited time dp to the prewit these reasons neither large farmers nor sugar companies growing urge amounts of beets for their own ue have been able to produce aceta as profitably as iliavi the far miera alio have contented with the cultivation of not to exceed twenty acres in fildi email tracts the ordinary amount of labor employed upon other parts of the farm ii quite sufficient to perform he quick work necessary in the seeding thinning and harvesting of tho beet crop and under such circumstances sugar the farmer and hw family get the entire productive value of his land unattended by alie necessary individual iowa from employing temporary awl transient labor the fact that most of the farmers in utah are men of small holdings lias been one of the moat about the factors in benging results of utah suar present tuc ba culture aal to this fact also attributable the further fact that butali beanda t the head of the beet to the greatest r both an bynm pop acif as well as the greatest afi mr acre utah and today produces about tons of acet with an of about forty pounds half of which is consumed in this state and the other half of 1 to our neighboring states or shipped to missouri river consumers clearly ciol xiol an industry
