Show PEANUT CROQUETTES. Peanut croquettes may be substi tuted for meot dishes. The following recipe bas been found satisfactory Ms 16 a thiek white satire using two 'ablesoonfuls of butter, one-quarter of a cup of flour, two-thirds of a cup Of milk and the olks of two eggs To this add one and one-half cups of ground roasted peanuts If more peanuts pea-nuts are used it will require more sauce fool shape and dip in egs and crumbs and try in deep fat Chestnuts Chest-nuts may be substituted for peanut in this recipe They should be boiled and not roasted before using. These i-roquHtes are nice served with jell In that case they should be shaped in j nests before frying, so that a spoon I ful of jelly may be placed on each croquette before Bervlng |
