Show THE COUNTY AGENTS COLUMN by MORGAN P mckay sanitary measures insure li keeping LeepIng of canned goods by eina elna miller ex nutritionist U S A C foods spoil because of bacteria yeasts and molds foods keep it we destroy these causes canning which results in a perfect sterilization and a perfect seal will preserve foods we can van get a perfect seal if we ex amene the jars or cans before putting any food in them to see that a per feet seal la Is possible by making sure that the jar Is tree free from chacks or nicks and that the top of the jar is smooth often we find a rough point at the seam of the jar which Is sut suf focient to cut into the ring or sealing compound A nail tile file will quickly remove this roughness it if a wire clamp jar Is used the clamp may need to be removed and tightened by pressing in at the sides and down in the middle many people are using ane tin tia icons for home canning this of course necessitates access to a can sealer canning in tin does away with the possibility of spoilage thru in perfect sealing no juices are ex there Is no fading of color bor Is there breakage in many ways a better quality is possible than it glass is used when the tin cans are used they can be plunged into cold water as soon as the processing Is done and further cooking Is thereby stopped which results in a much sounder firmer to help with the perfect sterilize liza lion the jar should be washed thor oly in hot soapy water rinsed and in averted in a pan of boiling water for ten minutes rings and ude ilde should be sterilized before using jars are to be kept hot until needed in fruit and vegetable canning a very important factor Is the selection of freshly gathered and sound pro ducts one hour from garden to jar is the best time to follow every hour hours s delay from garden to jar means longer processing in order to insure sate safe keeping too much emphasis cannot be placed on the importance of careful washing and cleaning of products to be canned the more dirt we get rid of before the processing begins the fewer bacteria will remain to be kill ed I 1 ess than ic out of goes to support county agent A very interesting Inter sting article was just received from the united states de apartment part ment of agriculture concerning the appropriations and expenditures handled by that department incident to the increased attention which is being given to public eapen throughout the country some confusion has arisen about the to tal expenditures of the department of agriculture what they javer and their relationship to the expenditure expend es of the government as a whole A great deal of criticism has beba launched recently particularly from the moneyed interests of the countey criticising criticizing critic ising the government tor for ampro dilating pi lating such a tremendous amoun for agriculture just as a matter of general emment therefore the department has issued a bulletin showing just what portion of the total tion goes tor for the direct benefit of the farmer of the total tion to the department of agrical ture 57 98 per cent goes to ROAD FUNDS in which the farmer cartic spates as well as others this in I 1 ludes federal aid to states foiest roads and trails and the mt alt vernon highway emergency drouth loans 15 68 per cent to the weather bu reau meat inspection food and drug law forest service biological survey and tuberculosis eradication 11 4 per cent other ord nary actie 1 atles of the department 10 2 per cent to the various states of the union for state experiment stations I 1 extension work forest tire fire preben tion lion etc 6 5 28 per cent As compared with the total eapen of the government and yar var ious ions other departments the relation of the department of agriculture is as follows all purposes on the ba sis of net cash withdrawals jil i ludes audes all the above ment lonec agencies 6 9 per cent when road and drouth loans are deducted I 1 li leaves a total of 1 68 per cent so continued on back page COUNTY AGENT COLUMN CONTINUED that on final analysis the percent age which Is actually used for the farmers benefit to 1 34 per cent of the total of the expenditure in utah the appropriation for ex tension work and experiment sta eions is only partially matched by a state appropriation and as a result tor for the extension work in this state between 85 and 90 per cent of al sal aries paid to county agricultural agents come from federal sources the remaining 10 and 12 per cent 1 is appropriated from state funds bringing it a little closer to home in millard county the extension work which is klar ired on here costs the farmers and other interests who pay taxes only of ONE mill only the traveling expenses of the county agricultural agent are paid by millard county on the bas base is of 00 paid into the county annual ly this amounts to less thin ONE cent paid for the extension worker so in the final analysis as there are practically no farmers in the county who pay government income taxes and as the larger counties in the state make up most of the state taxes the actual cost to the county tor for maintaining extension service is less than one cent for every 00 00 taxes paid in farmers housewives outings don t forget the farmers and housewives outings to be held in millard county soon the west side to meet in oak creek canyon or july ath and the east side to mee wee in corn creel canyon on july eth be there that day with your famel and join in the good times and en that are being planned |
