Science's recently discovered discov-ered cmi, the haemolitie streptococcus, streptococ-cus, sometimes found in ordinary market mar-ket milk and a cause of. septic sore throat, is destroyed at momentary heating of 12!) degrees Fahrenheit, recent re-cent tests have shown, according to Agnes M. Olson, food expert. "ltesults of tests have established that heating milk to 142 degrees Fahrenheit Fah-renheit for a period of 30 minutes, destroyed de-stroyed all disease germs," said Miss Olson, in an address before club women wom-en here. "Disease germs used in the experiments experi-ments were those sometimes found In cow's milk tuberculosis, typhoid, paratyphoid, par-atyphoid, diphtheria, septic sore throat, and others. Altogether, more than l,-500 l,-500 bacteriological tests were made. Diphtheria bacilli were destroyed at the same heat as the bacmolitlc streptococci, the tests proved. Ty- " phoid bacilli were destroyed by mo-nientury mo-nientury heating to 141 degrees and by one type of appnratus at 132 degrees de-grees for 30 minutes. The. amount of bacteria used was much greater than would be encountered in the milk under ordinary commercial conditions. "Ordinary market milk that has not been subjected to heat may not be free from disease germs. Evaporated milk, which is merely fresh cow's milk with 60 per cent of the water removed, is sterile, having been treated to 240 degrees of heat in the processing of the product, which Is one of the prima reasons why medical authorities advocate ad-vocate its use as a food, not only for the infant, but for the adult as well." |
