Nevens of the dairy department department de de- college of agrIculture University Uni- Uni of illInois The Increase Is not due to the increase In population I alone but Is caused also by n a more liberal use of daIry products by people peo peo- pie generally he me said I FIgures sent out recently by the federal Department of AgrIculture chow that records of butter and cheese consumption lma have e been kept sInce I 1549 The amount of butter per person per per- son SOil annually increased from about 14 pounds In 1549 to about 20 0 pounds In 1809 1599 and Is now about 17 pounds Cheese consumption has fluctuated somewhat and Is now n a little over o-er four pounds a person n a year ear Records of other dairy products are available a for only only- a few years The use of whole milk has increased stead Ily since 1917 about 29 per cent more being uSEd a person now than nine years ago Condensed and evaporated e milk have also found a larger use per person durIng the same perIod The l lee e cream Industry has had a avery avery very remarkable growth since IDOO 1903 There There has been a steady y IncreasE In consumption until now about 11 quarts of f lee Ice cream ream ar arA consumed annually a person or more thap 3 2 times as mu much lJ as in 1903 The The use use of all dairy products a person person per per- son figured In terms of mIlk shows an Increase of over per cent as compared with 1909 1009 This fact Is most signIficant and argues well ell for the continued stability and expansion of the dairy Industry Doctor Nevens ens e said |
