Crockett furnish an article In icferencc to dairy fiauds Is of consldciable Interest to all, and to those who are engaged In the business of butter making, it can not well bo passed by. It is stated that a fraud which threatens to work gicat injuiy to the dairy Interests of the state of Utah, has made Its appearance. It Is a churning piocess by which the yield of buttci can be abnormally Increased In-creased by Incorporating a large quantity quan-tity of water and casein. A report has reached the Station to the ctlett that the promoters of this churning process arc successfully enlisting en-listing the rights of Utah farmers and arc selling county rights at fabulous fab-ulous pi Ices. It Isalso stated that the products of the "piocess churning" is undesirable, wholly unfit for use either In the way of eating or for cooking purposes, and attention Is also called to the law which reads as follows: Section 10. Uutter of standard purity shall be butter made fiom milk or cream; shall be free from all additions except salt and shall contain con-tain not less than 85 per cent, of butter-fat. Section 10. It shall be, unlawful for any person to sell oi oiler for sale, to any person who asks, sends or inquiries in-quiries for butter, any oleomargarine, buttci Ine or any substance made in imitation or semblance of pure butter, but-ter, and not made entirely from milk of cows or without coloring matter. Penalty: Any person who shall violate nny provision of this act, or who shall mlsbrand any package containing con-taining anv article of food, shall be deemed guilty of a misdemeanor, and upon conviction thereof shall be punished pun-ished by a line of not less than ten or more than one hundred dollars. And any article of food found In his possession posses-sion In violation of any provision of this act shall be subject to confiscation confisca-tion and spoliation. In view of the law In the matter it might be well If our dairymen and farmers would look a "leedle oud" before having anything to do with men who may try to Interest them In this process. As to the people who have to eat butter, and want only the best, the following test Is offered: Take a small quantity of the suspected su-spected article, place in a glass tube and heat until a clear of fat Is obtained. ob-tained.
