Gently stir in 2/3 cup pumpkin and 1 tsp. lemon juice In another bowl combine: 3/4 cup flour, 1 tsp. baking powder, 2 tsp. cinnamon, 1 tsp. ginger, 1/2 tsp. nutmeg and 1/2 tsp. salt. Fold dry ingredients into pumpkin mixture. Grease a 15x10x1 inch sheet pan, line with wax paper, grease and flour paper. Spread batter on pan, top with 1 cup finely chopped nuts. Bake 15 minutes at 375°. While baking, sprinkle clean dish towel with powdered sugar, cool cake 10 minutes, turn onto dish towel and roll towel and cake. Cool in refrigerator. FILLING: 1 cup powdered sugar 6 oz. cream cheese 4 Tbs. butter or margarine 1/2 tsp. vanilla Beat all ingredients until smooth. Unroll cake and spread filling on inside (the side without nuts), re-roll (without towel, of course!)
