I have wanted to be a hairdresser for as long as I can remember.” This statement by Christine Newhall of Valley Hair says it all. Pursuing her passion as a hairdresser, Christine’s career started at one of the most sought out salons in Dallas, Texas. She worked under the creative directors for the Farouk Academy obtaining valuable skills without losing her small-town charm, drawing inspiration from her childhood. Growing up in East Layton the youngest of seven, her childhood was spent working hard on the family farm, backpacking trips in the Uinta Mountains, exploring her backyard of Hobbs Hollow Pond, and the East bench of the Wasatch Mountains. Outdoor creativity was endless. Today, Christine’s pursuits are much of the same. With eighteen years in the beauty industry, she developed a knack for tedious tasks, which led her to her specialty of hair extensions. A valley resident going on nine years now, she says she enjoys spending time with her husband and their five kids. Some of their favorite activities include skiing, biking, hiking, dirt biking, and camping. Behind the Scenes at Fresh Simple Greens By Student Reporters Maryanne Hale & Scarlett Hyatt We recently had the opportunity to interview Cooper Griffiths at 229 9900 E. Huntsville, the home of two metal greenhouse sheds! Once we walked in, we saw Cooper ready to welcome us and smelled the scent of fresh greens. We walked around and saw lettuce, flowers, and leaves of all kinds. Both Scarlett and I felt the fresh air on our skin. We heard water running through the walls as we walked down the rows and rows of plants. The lighting was different from what you would normally see. It was fairly dark. The only source of light were the LED lights that were shining right onto the moist plants. Lastly, we could both already tell that Fresh Simple Greens was going to be one of the best interviews yet. Cooper and his brother Porter had worked for their dad at Tropical Snow Cone since Cooper was 12 years old. It’s their family business. As he grew up, he and Porter liked the idea of working for themselves. The brothers decided to develop a plant business. Cooper said, “We decided to start the business because we felt it was important to grow food locally, and grow high-quality, clean food that does not have any herbicides or pesticides.” They found a spot here in Huntsville for their farm, and then it took about a year to get Fresh Simple Greens up and running. They now have all sorts of edible plants growing there such as lettuces, radishes, peppermint plants, wasabi plants, basil, and lots of other herbs. There are many different varieties of lettuces, and things to choose from. The greens we tasted were really good! The wasabi was spicy... very spicy. We definitely recommend you give it all a try! They do an incredible job taking care of the plants! Fresh Simple Greens have their produce go to different places for pickup, so it is easy for customers to get their food. They keep the little plants there because they have heat lamps to help them grow. A lid is placed over the plants so that they can sweat. The sweating must help them grow even faster. After about seven days, they will take the lid off, and put the baby plants with the more mature plants. These are grown vertically inside “‘compact hydroponic farms,” which means they can grow more food in a smaller space and they don’t use harmful chemicals. They are more nutrient dense, have more flavor, and stay fresh longer. Once the plants are moved from the nursery, new ones are started in their place and the whole cycle starts over again. The more mature plants are grown and harvested from columns on the wall. Panels and panels of them! Fun Fact: Plants look green because that’s the color they reflect. They absorb the LED red and blue lights that cause them to grow. To conclude, Fresh Simple Greens is amazing! You should go check out the farm. They use a lot of cool technology and the tour was really interesting. The inside of the farm was cool and bright and inviting. It smelled really clean and fresh, and it was a happy place to be.
