PARK CITY FILM: ‘SWAN LAKE’ Park City Film and the Park City Library will present a special screening of Matthew Bourne’s award-winning ballet, “Swan Lake,” at 7 p.m. on Thursday, April 4, at the Park City Library’s Jim Santy Auditorium. The ballet was filmed at the Sadler West Theatre in London earlier this year. General admission tickets are $10. Tickets for students and senior citizens are $9. TANZI PROPST/PARK RECORD Jessica McCleary, owner of Mountain Town Olive Oil, stands in the store’s 1,000-square-foot kitchen where McCleary offers Next Course food and wine pairing classes. ‘TRIUMPH OF SPIRIT’ AT THE ECCLES CENTER Park City Institute and the National Ability Center will present an evening dubbed “Triumph of Spirit,” which will include the screening of two documentaries, “Sound of Silence: Born Severely Deaf” and “Return to Paradise: A Skier’s Journey,” at 7 p.m. on Friday, April 5, at the Eccles Center for the Performing Arts, 1750 Kearns Blvd. “Sound of Silence” is about Robin Gillon, who found success on skis. Born hearing impaired, Gillon faced bullying and struggles at school, but refused to let the actions of others and his disability hold him back. Gillon is now part of Scott Sport’s freestyle team. “Return to Paradise” is about Mike Vowels, a champion freestyle skier. The film is about his mental and physical journey as he returned to skiing, 28 years after a paralyzing accident. Both athletes will make an appearance at the screenings. Tickets are $10 for adults, and $5 for youths ages 18 and younger. For information, visit parkcityinstitute.org. BALLET WEST II AT THE DEJORIA CENTER Ballet West II will perform at 6 p.m. on Saturday, April 6, at the DeJoria Center, 970 N. S.R. 34 in Kamas. The performance will be an evening of repertoire that will include Elena Kunikova’s “Divertimento,” Petipa’s “Don Quixote Pas de Deux” and “Swan Lake Pas de Trois” among others. Classes take place in the kitchen behind the Main Street store SCOTT IWASAKI The Park Record Jessica McCleary opened Mountain Town Olive Oil on Main Street in 2009. The goal was to not only sell extra virgin olive oil and Balsamic vinegar from Modena, Italy, but to be a resource regarding how these liquids are used. In 2012, the shop owner decided to get more proactive and host olive oil 101 courses. Last July, McCleary went one step further and began hosting Next Course food and wine pairing classes at 1 p.m. every Thursday. The next class is titled “Asian Made Easy,” and students will observe and learn how to make caramelized pork belly and cucumber skewers, spicy chicken lettuce wraps, shrimp and vegetable summer rolls, chicken lemongrass banh mi bowls and sweet miso soy eggplant noodles. Each class is taught by Deanna Fitchat, owner of the catering company DeeLicious Park City. The first half of the class is Fitchat preparing the dishes, McCleary said. “Then, in a magical TV moment, she brings out the complete dish that she has already made,” McCleary said. “That way the class doesn’t have to sit and wait for a meatloaf to cook for an hour and a half.” After Fitchat serves the food to the class, McCleary pairs each dish with wine. TANZI PROPST/PARK RECORD After each Next Course cooking class, students get to take home free samples of Mountain Town Olive Oil’s extra virgin olive oil and Balsamic vinegar. “I am a novice wine lover, and I have purchased many books about wines from different regions and what foods to pair them with,” said McCleary, who is currently learning how to become a Northern Italian wine scholar from Wasatch Academy of Wines in Salt Lake City. “After the class is over, the students will get to take the recipes, oil and vinegar samples, cooking methods and a shopping list of ingredients home.” McCleary enjoys planning the classes with Fitchat. “Deanna will send me the recipes and I’ll go through them and do the research of the wines,” she said. “We teach three to five different recipes each week and we do that through Next Course Food and Wine Pairing When: 1 p.m., Thursday, April 4 Where: Mountain Town Olive Oil, 613 Main St. Cost: $50 for the class and $15 for an optional wine pairing Phone: 435-649-1400 Web: mountaintownoliveoil.
