They love the approaching 2008 presidential election coverage, the rapid climate change controversy, the sad stories of deaths, kidnappings and murders, the celebrity gossip and the sports scandals. The list goes on forever. But sometimes it's hard to keep up on the world's events when you dislike TV. So here's a way to keep up with what's going on in our crazy world without yourTV. Everyone knows mainstream news outlets like CNN, Fox News and MSNBC, but mainstream news (and anything, for that matter) can only suffice someone for so long. The world is a nonstop bakery of delicious stories of heroics, perils, achievements, despair and creativity. The mainstream media outlets fail to feed us the tasty morsels of information we need and crave. Lightly salt and pepper chicken breasts and cook on indoor grill or frying pan until the center of chicken is no longer pink. Meanwhile, chop reserved lettuce, red bell pepper, red onion and cilantro and put them in a large bowl. Drain and rinse canned black beans through a strainer and add to bowl. Drain all other canned ingredients and add them to the bowl. Once the chicken is cooled, chop in bite-sized pieces and add to bowl. Toss all ingredients with salsa, barbeque sauce and crunchy noodles. Pack mixture in a seal- able container and put in cooler. When you arrive at your destination, fill lettuce bowls with the mixture and don't forget the forks! Cheddar Bacon Biscuits: Bisquick mix 5 slices bacon 2 cups shredded cheddar cheese 1 Tablespoon chopped Italian parsley (optional) Cook bacon on frying pan until crispy, drain oil and pat dry with paper towel. Prepare Bisquick as directed for "biscuits." Chop or crumble bacon into small pieces. Gently fold in cheese, bacon pieces and parsley.
