Positions may be filled at many of the National Wildlife Refiiges and Wetland Management Districts in Nebraska, Kansas, South Dakota, North Dakota, Colorado, and Montana. Fire positions generally last three to sis months. While many positions are filled by students just during the summer months, there are also a number of opportunities for employment early or late in the year as RefUge fire crews conduct prescribed bums in the spring and fall. Select individuals can expect to work at a variety of refuges withing the region and may be sent to other areas ofthe country on wildfire suppression or prescribed burning assignments. When not involved with fire-r- e la ted activities, fire crews conduct natural ssauurce projects to benefit wildlife. United States citizens may apply, but must be 18 years of age at the Ask a Specialist As I've grown older I've lost my appetite, can I get it back? Answer by: Jean Alder, Utah State University Extension Cache County Home Economist If as a senior you find that the foods you used to love just dont taste the same, its not your imagination, its a fact. Over time our senses of taste and smell (chemoaensoiy) diminish, either naturally or as a result of medical treatments such as chemotherapy or medications. These chemoaensoiy losses can result in a decrease in appetite, lack of interest in food or even malnourishmentand anorexia. As complex as the reasons may be for chemoaensoiy loss, compensating for taste or smeU is well within your control Here are some ideas for making food more appetizing. First, make sure that the food is attractively arranged and garnished. Present meals on plates with simple patterns so the food is dearly visible. Vary the shapes, textures and tempera tuna of the food. Take time to savoryour (bod, smell it before you taste it, and chew thoroughly before swallowing. 'Augment your foods flavor with a variety of herbs, spices and other flavor enhancers. Maximizing food flavor does not caU for greet culinary skill, only imagination. You will find that, even if following a restricted diet, by creatively adding common ingredients in small amounts, the bitter note of some foods can be masked, and your overall enjoyment of food can be increased. Look for strongly flavored foods, if tolerated, such as garlic, onions, citrus fruits and flavored vinegars. Use fruit sauces or jams, as well as concentrated flavors and extracts to stimulate taste buds. Double the amount ofherbs and spices added to recipes, but within reason. Some spicy seasonings, such as black or red pepper, shouldn't be doubled automatically. Also, dry rubs and spicaherb combinations on meat ana poultry add flavor without fat. Use flavor enhancers like monosodium glutamate (MSG) to enhance savory foods or reduce perceived bitterness or acidity. MSG's effectiveness is not dependent on the ability to smell; and because it is lower in sodium than table salt (75 mg vs. e 2,500 mgteaspoon), this flavorenhancer can boost the flavor of sodium-restricte- d diets. Add small amounts of fat (creamy dressing, cheese sauce, bacon bits) to soften sharp-tastin- g foods. .The chemoaensoiy losses associated with aging and medical treatments can be readily and easily managed. By using these simple tips, themselves, or through their caregivers, mqy regain the eqjayment eating once had. leading to improved nutritional status and better overall health. easy-to-us- se-nio-rs Caring for your holiday Poinsettia Poinsettias can maintain their decorative value well into February with a little extra cars.
