W Bauer Dauer MD M.D. Consultant National Dairy Darry Council COOL FOODS FOR HOT WEATHER High temperatures seem to put temperamental people out of temper temper temper tem tem- per for hot foods And why not There used to be lots of prejudices prejudices prejudices about the temperature of foods and drinks and health educators had their share I remember remember remember re re- re- re member a controversy I had with some of my colleagues when I Iwas Iwas Iwas was so bold as to suggest that cool drinks were okay if they were sipped and not gulped My defense was that there was some chance of this advice being fol fol- followed followed followed lowed while if I suggested that all aU iced drinks be banned all allI allI allI I would get was the big laugh and the designation health crank Later the Journal of the AMA AJA published an article saying say say- ing that iced drinks do no harm if they are not taken too fast Well differences of opinion make life more interesting Cool Planning So now does hot weather really make a difference in what and how we eat Eating should be bea a pleasure and not a ch chore re This means that we should pay attention attention attention at at- to eating somewhat differently differently dif dit when the weather is hot Naturally we must keep the diet balanced Thus we should not reduce our intake of pro pro- tein But we may get protein in milk mUk ice fee cream cheese cold mea meats poultry and fish and eggs hard hard cooked in your salads instead of the tho conventional hot cooked foods which are fine when the weather is cool Neither do we need as many calories to maintain body temperature temperature tem tem- when its it's hot so we can reduce the fats in our diet espeCially especially es es- the hot fried ones and get our quota of fat from cream creamon on our berries and again ice lee cream and cool salad dressings Since we need fewer calories we can use more of the sugar low-sugar vegetables so useful in salads lettuce white or red cabbage radishes young onions carrots cucumbers tomatoes Enriched stuffs bread-stuffs round out a well- well planned diet Cool Meals Meats What about a hot dish with every meal which used to be bea a nutritional slogan Maybe Im I'm Ima a maverick but I see no real need for a hot dish in hot weather er er when there are so many cool foods that can serve just as well Salads for example can be made In infinite variety garnished with fish cheese fruits vegetables meat crisp bacon anchovies eggs nuts olives and pickles With the addition of some of the numerous varieties of flavored wafers now available salads become become be be- come meals in themselves Beverages Cool milk shakes of various flavors favors iced tea or I coffee soft drinks served in a pleasant room or on the patio paUo or under the trees on a picnic I That's cool ma man co o co o II I I |
