Here is a new deal on cheese cake, is sure to like your ever-lovi- n this one. . . . , RICH CIIEKSE CAKE Crust: cups graham cracker crumbs pumpcrnickle (o r crumbs) cup butter 2 tbl. sugar Filling: 1 lb. cream cheese, softened cup light cream Vi cup sugar 2 whole eggs 2 tsp. vanilla Topping: 1 cup sour cream 1 tbl. sugar , !4 tsp. vanilla Strawberries Combine crumbs with melted butter and sugar. Butter a 10 inch pie pan thoroughly. Set aside 2 tbl. of crumbs. Press remaining crumbs in a very thin layer on bottom and sides of pan, using the back of a tbl. Place in the frig to chill. Set the oven to 350. Beat cheese until creamy. Add the cream and beat well. Add the eggs and beat again. Beat in the vanilla. Pour into the chilled pie life Keep Homes Locked! Citizens Reminded By Marge Burgeoer crust. Bake for exactly 20 minutes. Remove from oven. Beat sour cream, sugar and vanilla until thick and creamy. Spread this topping over surface of baked pie to the very edges. Return immediately to oven and bake exactly 5 minutes longer. Fill in edges with the remaining crumbs. Chill. Top with a garland of washed whole berries. Serve additional berries. You can use frozen berries just as well, or try raspberries. More sweets for your sweetie. . ANGEL COCONUT SOUFFLE cup milk tsp. salt 3 tbl. cream of rice 2 tbl. butter 1 tsp. orange or lemon extract 3!-- i oz. can angel flake coconut 3 eggs, separated v cup sugar Scald milk in top of double boiler. Sprinkle in salt and Cream of Rice, stirring constantly, and cook, stirring gently until thick, about 3 minutes. Lower heat, cover and cook 5 minutes longer. Stir in butler, flavoring and all but about V cup of the coconut. Beat egg yolks until thick and light. Stir a few spoonfuls of the cooked rice into the beaten egg yolks, then stir this mixture into the rest of the cooked rice. Pour into a deep 1'4 qt. baking dish, which should have only the bottom oiled. Sprinkle with remaining coconut. Bake in a 350 oven until lightly browned. Save the egg whites for making meringues. Basketeers Begin Bantam Showing Throughout February some Utah youngsters arc playing basketball to help other boys walk. The program to raise funds for the Utah Society for Crippled Children and Adults is an annual Utah National Guard bantam basketball benefit show. Youngsters 11 to 13 will play in Utah National Guard armories throughout the state this month. The bantams are now selling tickets to the games in hopes of presenting the society with another $1, s check. In 1961, the bantam basketeers sold enough tickets to contribute $1,248. Last year the figure soared to $1,693, and Maj. Gen. Maxwell E. Rich, Utah adjutant general, hopes to surpass that total this year. William F. Haney, executive director of the Utah society, has lauded the Utah . National Guard's benefit basketball prog-,raBantam basketball, under the direction of Brig. Gen. Maurice L. Watts, has grown from a small league in Salt Lake to over 130 teams in all reaches of the state. Mrs Flossie Nikkei, national director of junior activities, will be a featured speaker and re port on the coming years prog ram. In May of 1962, long distance rates on calls within the state of Utah were reduced from 5 to 15 cents depending on the distance involved. In addition, report charges were discontinued on uncompleted calls. The discontinuance of report charges and the reduction in other calling rates last May resulted in a substantial saving to Utah telephone users, Milton Nelson, manager for the Mountain States Telephone Co., said. A new rate schedule is to be n established for calls between states.
