Drain. Sprinkle inside and out with lemon juice, salt and pepper. Melt butter or margarine in large saucepan. Add onions and cook until tender. stir in the apples, apricots, bread cubes, salt and pepper. Mix and cook 1 to 2 minutes. Start oven at 325 degrees. Spoon stuffing lightly into cavity. Close opening with string and skewers. Cover with bacon slices and cheesecloth soaked in bacon fat. Place goose, breast up on rack or roasting pan. Roast 20 to 25 minutes per pound, or until tender and done. If he bagged one that dates back to Brigham, add about one cup of hot water and cover pan for last hour of baking. Then uncover, remove the bacon and cheesecloth and let brown for 15 minutes. If you roast them without the water, be sure and basic the goose frequently.
