We like the following menu for .hot days: BARBECUED LEG OF LAMB (Rotisserie) 4 lb. leg of lamb, shank bione removed 14 cup brown sugar 14 tsp ginger 14 tsp cloves . 1 tbs lemon juice 1. Wipe meat with damp cloth. 2. Insert spit of rotisserie through meat as close to bone as possible. Insert prongs. Fasten clamps securely, 3. Follow manufacturers direction for operating rotisserie. Roast at a low heat allowing 35 min. per lb. or until tender. 4. Combine sugar, ginger, cloves and lemon juice. 5. Fifteen minutes before roast is done baste with sugar mixture. 6. Makes 6 servings. PAPRIKA POTATOES 18 small salad potatoes 14 cup water I tsp salt II cup butter 1 tbs paprika 1. Scrub potatoes. Do not peel. 2. Place potatoes, water and salt in a saucepan. Cover. 3. Cook at a high heat until steaming, turn to a low heat for . egg, slightly Combine first five ingredients. 2. Add slightly beaten egg. Stir until well blended. 3. Cook until thickened. Stir constantly. Chill. 4. Makes about 1 cup. with butter. BROCCOLI 1. WITH GOLDEN CRUMBS About 2 lbs broccoli qts boiling water 2 1 tbs salt lbs butter 14 cup dry bread crumbs 1. Wash broccoli; remove leaves and split less tender ends of stems. 2. Drop into rapidly boiling salted water. Cook uncovered 8 to 10 min. or until tender. Overcooking spoils the appearance and flavor of brpccoli. Drain. 3. Melt butter in skillet. Add crumbs; brown lightly. Stir constantly. 4. Sprinkle over broccoli just before serving.
