Our United States President chose the subject Food, Nutrition and Health for the White House Conference held in December, 1969. Why this interest in nutrition in a country that produces an abundance of food? Many young men who came up for the draft were not in good health. Interest was aroused and studies showed that people in United States, especially young children, young teen-ager- s, mothers, and older adults were not getting sufficient amounts of protein, iron, thiamine, riboflavin and niacin in their diets to maintain general good health. Our Government has some very fine programs going in many counties of our State to help under--t privileged groups become inits1 formed on proper diet and importance and are teaching the Women School For Leadership is the World of Women 1971 theme of the Leadership School for Women, scheduled 4 at Utah State October University. A survey shows that most bakers of the State enrich their white bread, yet this is not sufficient with all of the hot dog and hamburger buns, sweet rolls, and doughnuts that are being consumed among the young and old. Many States have enrichment laws; two Western states passed such laws the past year. Let us put Utah in line with a needed enrichment law. The committee engaged the assistance of Utah State University Specialists in the design and for technical assistance. The booth consisted of a comparison between farm grown commodities that had been chemically treated and commodities that were left to their own resources. There was an immediate recognizeable difference. The commodities that had been treated to kill weeds or insect pests were larger, more uniform and had a greater appeal for consumption. In achieving greater childhood development he noted that greater responsibility must be placed on the family unit. He said the state had made great strides in the past 25 years on water pollution, but the current sewage treatment plants will be totally ineffective by 1990. Solving pollution problems presents some serious problems in Utah.
