Johnson says this abnormal prosperity was unwelcome, because the curiosity seekers crowded out the class of patrons the promoters of the saloon were trying to reach and interfered with the development of the place as a poor mans club. The most startling feature In connection with these figures is the fact that from "wet goods and other sup' pile that cost 8190 the tavern get $600 caah. The 8ubwsy tavern Is sup' posed to sell only first-clagoods, but the profits In a popular saloon are great, even If the best of goods are sold at low prices. For example, the beer which is sold at the tavern costs 52.S5 a keg. A keg of beer furnishes from 200 to 225 glasses. At a fair estimate the $2.35 keg of beer brings $10 Into the ensh drawer. It brings more to the tavern, for the bartenders put lots of Vollars on the beer they serve. Mr. Johnson says he pays $3 a gallon for some of the whisky he sells over the consecrated bar. Whisky will will go from sixty-fiv- e to seventy drinks to the gallon in that neighborhood. That means $6.50 to $7 return The Knowing Pastry Cook for every gallon of whisky.
