BREAKFAST POTATO PANCAKES 1 Vs 1 1 Vi 1 pounds (4 medium) potatoes, cut into chunks egg, beaten teaspoon salt teaspoon pepper cup (4 ounces) shredded sharp Cheddar cheese 2 1 Vi Vi In heavy covered saucepan cook potatoes in 2 inches boiling water until tender, about minutes. Drain thoroughly and shake potatoes in pan over low heat 1 minute. Beat or mash potatoes until quite smooth; mix in egg, salt and pepper to blend thoroughly, then mix in cheese, parsley, thyme and 1 tablespoon of the corn meal. Form mixture into 8 oval patties about A inch thick; roll in com meal to coat completely. In large nonstick skillet heat half the oil over medium heat. Add patties to skillet and fry until bottoms are golden, 4 to 5 minutes. Add remaining oil to skillet; turn patties over to brown other sides. Heat the remaining 2 teaspoons oil in skillet over medium heat. Add potato mixture. Cook until bottom is set. With rubber spatula lift edges, allowing liquid portion to flow underneath. Repeat several times until most of the liquid is set. Set skillet in oven. Watching very closely, bake just until completely set and top is nicely browned, about 10 minutes. Cut into wedges to serve. Place stuffing casserole in oven during last half hour of roasting. Remove chicken to platter; let stand 10 minutes before carving. Accompany with stuffing casserole. Makes 6 servings microwave.
