Darlene Nelson gave me her recipe sometime ago and also Arlene Heelis. They are both nearly identical recipes. I would like you to try the following recipe for Enchilada Casserole and see if you enjoy it as much as my family has. ENCHILADA CASSEROLE 2 1 lbs. hamburger cup chopped onions 14 teaspoon oregano tablespoon chile powder 14 teaspoon tobasco sauce 1 tsp. garlic salt ' 34 cup flour 3 12 cups water 1 cup tomato sauce 12 cup shredded cheese 12 head lettuce 1 dozen tortillas Cook hamburger, onions, oregano and chile powder for 15 minutes. Add flour and mix welL Add water to consistency of gravy. Stir in tomato sauce, tobasco sauce, garlic salt. Simmer aU ingred- -' ients for a few minutes. Place in casserole dish in layers. Ghili mix, tortillas then cheese, repeat. Bake 25 minutes at 350 degrees. Serve with shredded lettuce. 2 Karolyn Searle Engagement told ' Mr. and Mrs. Junior L. Searle announce the engagement and forthcoming marriage of their daughter Karolyn, to Douglas R. Creer, son of Mr. and Mrs. Ronald S. Creer. Vows will be spoken March 6 in the Salt Lake Temple with a reception March 7 in the Palmyra Stake Center. The bride-ele- ct is a graduate of Spanish Fork High and LDS Seminary. She is presently attending Marys Beauty Colis a graduate lege. The benedict-ele- ct of Spanish Fork High School. He also has attended Snow College and BYU. He is presently employed by Pacific States Cast Iron. After their marriage the new Mr. and Mrs. Creer plan to reside in Spanish Fork. Phon Dnen Mr. and Mrs. J.D. Christensen visited last week with Mr. and Mrs. Ed Cutler at their home in SheUey, Idaho. Mr. Cutler is recovering from a heart attack which caused him to be hospitalized for some three weeks. The Christensens also visited friends in Shelley then went on to spend the night with others in Sugar City and stopped to call on acquaintances at Preston enroute home. Mr. Christensen began his teaching career in Idaho before moving to Payson and teaching until his retirement a few years ago. Mr. Cutleris also a former teacher in Payson schools and now retired. old time Payson druggist, residing in Roosevelt and his daughter, Mrs. A.P. (Helen) Chapman of Littleton, Colo., spent a few days in Payson visiting with Mr. and Mrs. J.R. Groesbeck. Thursday evening they enjoyed viewing colored photographic slides of Mexico, shown by C.E. Stevenson at the Stevenson residence. Others present were Miss Henrietta Douglass, Stanley Douglass, Mr. and Mrs. J.R. Groesbeck, Douglass Stevenson and the host and hostess. Dave Huish, now Mrs. DeUa Chatwin entertained at a dinner party Wednesday evening for Mr. and Mrs, Jack Mac Kay, Lake Shore; and Mrs. Flint Dixon, Provo; with Mrs. Twilla Fresne assisting with hostess duties. Mrs. MacKay, Mrs. Dixon and Mrs. Fresne were guests during the afternoon when Mrs. Chatwin entertained members of the Cultus Club. Gary Cberg, Petty Officer Second Class, spent several days at the home of his parents, Mr. and Mrs. Bernard Oberg, when enroute to a new assignment in Brunswick, Maine. He wiUtake special training there and is scheduled to be reassigned to the USS Reeves D.L.G. 24, which is now in dry dock at the Bath Iron Works, in Bath, Maine. Prior to his he had been serving on the USS Galveston out of San Diego, which is being taken out of service. Garys wife, the former Kathaleen Richard of Chicago, is remaining at Chula Vista, Calif., v, here she is employed at the Bank of America. Mrs. Della Chatwin was pleasantly surprised recently when a party was arranged in honor of her birthday at the home of Mr. and Mrs. Lynn Youd in Lake Shore. Others present were Mr. and Mrs. Jack MacKay, Mr. and Mrs. Dean Taylor, Lake Shore, and families, and Mrs. Twilla Fresne, Payson, in addition to the family of Mr. and Mrs. Youd. Mr. and Mrs. Bert Sanford and Mr. and Mrs. Jack Spencer, Payson, spent the Betrothal told Marriage plans are announced for Emma Fae Perry Burr and Danny Jack Erekson, who will exchange wedding vows on March 12 in the Manti LDS Temple. The same evening a reception will be held at the West Ward Cultural HalL Parents of the young couple are Mr. and Mrs. Lyman Stutsman of Wausaukee, Wis., and Mr. and Mrs. Harold Erekson. The bride elect graduated from Kings-for- d, Mich, high school and attended University of North Dakota and Brigham Young University. She was affiliated with Y Squares. Mr. Erekson fulfilled a LDS Mission to the Spanish American people and is a graduate of Payson High and Payson LDS Seminary. He also attended BYU and was a member of Y Square. Invited to attend the bride are Billie June, Marjean, Rosalie, DeAnna, Marylin and Patricia Erekson, all sisters of the groom. A personal shower was held Thursday evening at the home of Mr. and Mrs. Harold Erekson with thirty guests in attendance. Miss Diane Barnett and Billie June Erekson were hostesses. The young couple will make their home in Payson where Mr. Erekson is employed. weekend visiting in Nampa, Idaho, with the Spencers son and wife, Mr. and Mrs. Kent Spencer, and little daughter, Shanna Spencer. Mr. and Mrs. Melvin Elmer were happily surprised on valentines day when they received a telephone call from their son and wife, Mr. and Mrs. Keith Elmer, Littleton, Colo., congratulating them on their 47th wedding anniversary. Later the rest of their family brought refreshments and joined them in a social evening that was enjoyed by alL Mrs. Eugene Hillman spent a few days last week in Salt Lake City with her mother, Mrs. L.N. EUsworth. Mr. and Mrs. Harvey Hutchinson recently enjoyed a two week vacation in Southern Calif., traveling in company with a group of brothers and sisters who attended the golden wedding reception honoring Manford and Bernice N. Cultus Club Through the Years titled a musical program presented Wednesday afternoon before members of the Cultus Club, who met at the home of Mrs. Della Mood Music Chatwin. The program was introduced by Mrs. J.D. Christensen, who read a short statement on the joy and beauty of music, written by Sigmund Spaeth, and then presented a ladies trio who sang a series of selections. The vocalists were Joyce Provstgaard, Lylia Carlisle and Kenna Holm with piano accompaniment by Shirley Riley. Thora Jean Jewett gave a reading. Beautiful songs from 1910 to 1970 brought memories to listeners, who were carmed with the music. Mrs. Don J. McCoy, president, conducted the meeting. She atated that names of prospective club members should be submitted to Mrs. Reed Money, membership chairman. Announcement was made that place mats imprinted with beautiful Utah scenes in color may be purchased through contact with Mrs. Mary Curtis of the club. Beta Cultus is seUing them as a project, she said. Legion Auxiliary Florence SheU and Mary Jeppson of the American Legion Auxiliary Post 48, attended the Legislative Council meeting held recently in Provo and gave the report at the following meeting of the Auxiliary. On Friday, February 20, 1970, Mona Hall, 1st Vice Pres Blanche Heathe and Pres. Betty Llewellyn of the American Legion Auxiliary were invited to a luncheon in Salt Lake City at the Ramada Inn in honor of the National President Marcella Davidson from New Mexico. She presented the Payson group with a National Citation for Meritorious Service in meeting the goal set by department , which was exceeded by 101 members. We received a citation for having our membership in by January 31, 1970 from State President Betty Calder. This made us eligible to receive a bonus girl for Girls State. We received $7.50 for having our quota in by October 10, 1969 which was the first contest held on membership. Membership Chairman Blanche Heath received a pin from Secretary Maxine Bishop from the State Department for having the most Vietnam members in the state. She also received a pin for Distinctive Membership and outstanding participation for 0. the year This was great tor the Payson Unit to receive and a special thanks to all the members who helped to make this membership drive such a success. 1969-197- Shop At Home Mr. and Mrs. Barney were married March 10, 1920, in Benjamin, Utah, and have made their home there since that time. Mrs. Barney, the former PrisciUa Hone, was born August 27, 1899, the daughter of Alfred and Hannah Ruth Hone, of Benjamin. Mr. Barney was born April 16, 1899, the son of Ephraim and Annie Barney of Lake Shore, Utah. Mr. and Mrs. Barney are the parents of 4 children; three of whom are still living: Arlie L. Barney, ElMonte, California; Alfred W. Barney and Mrs. Don (Marilyn) Eversole, both of Clearfield, Utah. They have 16 grandchildren and 3 greatgrandchildren. Miss Knapp is a graduate of Payson High School and ExCelsis Beauty School and is currently employed at the Pasadana Plaza Beauty Salon in Houston. PAYSON Mr. and Mrs. Colvin Tanner are announcing the marriage of their daughter, Sara-Rut- h Tanner Adamson, Provo, to Alfred Johnson of Tooele. The couple exchanged nuptial vows Monday, Feb. 16, in the Salt Lake Temple. Afterward, they were honored at awed-din- g supper given at Harmons Cafe in Salt Lake City. Among those attending the supper were Mr. and Mrs. Colvin Tanner, Mrs. Sarah Tanner, Payson; Mr. and Mrs. Donald Adamson, Mr. and Mrs. Max Littlefield, Provo; Mr. and Mrs. Fred Openshaw, Santaquin; Mr. and Mrs. Max EUsworth, Spanish Fork; and a number of others from Tooele. Mrs. AUen announced that candidates for the queen contest for Salt Lakes 24th of July celebration are being sought from girls whose ancestors are early Utahns. She also stated that members of the DUP are asked to save their old newspapers and take them to Eva Garner, who wiU sell them to provide funds with which to hire typing of histories of pioneers. Eva Crook, Audry Rasmussen and Edna Bennett were named as a nominating committee. A history of John Cary Hill, who came to Utah Oct. 1, 1850, with the Abraham Day Company, was given by Eva Garner. Afton DeWitt gave the lesson on the Mormons from Ireland. Mrs. Ruby Stickney was welcomed as a new member. CAMP NEBO Camp Nebo, Daughters of Utah Pioneers, honored the senior sweethearts of the unit at the monthly meeting held Feb. 12 at Payson First-Fift- h ward church. A hot luncheon was served at one p.m. in the cultural hall at beautifully decorated tables. Each sweetheart was given a small valentine cake as a gift. Maud Burton and Lorna Lightfoot were in charge of table decorations. Luncheon was served by n, Jennie Elmer, Odessa Davis, Hazel Mary Marvin, Matilda Haskell and Grace Fielding. Prayers were by Nellie Haskell. After luncheon members adjourned to the Relief Society room, where the meeting commenced with Capt. Jennie Elmer in charge. Singing was directed by Matilda Haskell with Grace Fielding at the piano. A history of George Nile Haskell was read by Arva Allgood. Leona Thomas presented the lesson on the Mormons who came from Ireland. She told the story of Agness Cross Douglass, an immigrant from Ireland, who settled in Nauvoo, 111., and later came to Payson as one of the early pioneers. Special numbers arranged by Rieka Wyler included a reading by Carol Taylor and accordion selections by Jennie Wilson. There were 24 members and one guest present. Arlene Daniels gave the lesson Mormons from Ireland, Scotland and Wales, mentioning the Douglass family which settled in Payson. Capt. Jensen announced that Reva Clay-so- n, Marie McClellan and Marjorie Larson wiU act as a nominating committee for elections. Refreshments were served by Thelma Taylor, Mildred Clark and Dora McCann to 11 members. Peggy Ann Knapp CAMP PETEETNEET The Camp Peteetneet DUP held their meeting February 12 at the home of Margaret Carlisle. Captain Clara Horton conducted. Prayer was given by Vera Combine flour, sugar, and lemon peel. Cut in butter till mixture is crumbly. Add Pat 12 egg yolk vaniUa; blend welL spring-fordough on bottom of pan (sides removed.) Bake at 400 about six minutes, or till golden; cool.' Butter sides of pan; attach to bottom, Pat remaining dough evenly on sides to a height of two inches. Cheese Filling: 5 8- - ounce packages cream cheese 1 34 cups sugar m 3 tablespoons enriched flour lemon peel 34 teaspoon grated 14 teaspoon salt 14 teaspoon vanilla 5 eggs (1 cup) 2 egg yolks 34 cups heavy cream Stir cream cheese to soften; beat till Combine next five ingredients; gradually blend into cheese. Add eggs and yolks, one at a time; beat well after each. Gently stir in the cream. Turn Bake at 500 for into crust-line- d pan. five to eight minutes, or till top of crust Reduce heat to 200; bake 1 is golden. hour longer. Remove from oven; cool in pan three hours. Remove sides of pan. Glaze with Pineapple or Strawberry Glaze. This is delicious! fluffy. PINEAPPLE GLAZE In a saucepan, combine 3 tablespoons sugar, 1 tablespoon cornstarch; stir in 1 cup unsweetened pineapple juice and 14 teaspoon grated lemon peel. Heat and stir till boiling; cook and mix till thick and clear. Cool to room temperature; spread atop cooled cheesecake; chill for 2 hours. Trim with mounds of whipped cream and pineapple. STRAWBERRY GLAZE 2 or 1 cup water 1 3 cups fresh strawberries 12 tablespoons cornstarch 34 cup sugar Crush 1 cup of the strawberries; add the water, and cook 2 minutes. Sieve. Mix cornstarch with sugar (amounts of sugar depends on sweetness of the berries) stir into hot berry mixture. Bring to the boiling point, stirring constantly. Cook and stir till thick and clear. Add a few drops of red food coloring, if needed. Cool to room Place remaining strawtemperature. berries atop cooled cheesecake. Circle with halved pineapple rings, for trim. Pour glaze over the fruit and chill about 2 hours. Green. Singing was directed by Vera Her accompanist on Green, chorister. the piano was Margaret Carlisle. The pledge of allegiance was led by Mary Jeppson. The report on the South Utah County meeting on February 5 was given by Clara Horton, Margaret Carlisle, Mary Jeppson and Klea McClellan. Allene Christensen was appointed chairman of the nominating committee for the election to be held in May. The lesson was given by Nellie Merrill. It was entitled Mormons from Ireland." Daughter Carlisle played Irish melodies on the piano and AUene Christensen received the book number 12, Refreshments were served by Clara Horton and Ella A. Hill.
