Answer by: Dan Drost Utah State University Extension Vegetable Specialist Logan - Cauliflower and celery can be two of the more difficult vegetables to grow successfully in the vegetable garden Both are crops that prefer temperatures in the 60 to 70 degree range for best performance At higher temperatures cauliflower will not head normally and celery will produce tough woody stalks Both require adequate water and fertilizer for optimal performance Here are some things you can do to encourage head formation on cauliflower Cauliflower should be grown as an early spring or fall crop Most gardeners have success with the “Snowball" cauliflower varieties as these mature in 55 to 65 days from transplanting It is best to grow five to six week old transplants ar J plant them two to three weeks before the last spring fro: Grow them at an 18 by 18 inch spacing in soils that have been enriched with well rotted manure or compost Once the plants are growing be sure to avoid w ater stress by mulching around the plants with grass straw newspaper or other organic matenals These help keep the soil cool and moist Water so that the plants never dry out especially when the heads start to form Avoid fertilizer stress by suppling the plants with a complete fertilizer preplant and with additional nitrogen five to six weeks after transplant ng Hot weather closed to heading will affect the appearance and quality of the head Always tie the leaves around the head when you can see it is the sze of a silver dollar This helps keep the head white and makes it less bitter For fall cauliflower plant in late July for harvests in late September or early October Heavy frosts on the plant before the head forms will delay development or may injure the grow tng point so adjust planting to gix e the plants time to mature in your production area Harvest the heads about two weeks after tying the leaves around the head Here are some things y ou can do to encourage sweet tender stalks of celery Celery requires from 100 to 20 days after transplanting to mature Therefore plant it early in the spring several weeks before the last frost It ts best to start with transplants These require 2 weeks to be of sufficient size for planting in the garden Alien transplanting be sure to incorporate plenty of compost or manure Plant 8 by 8 inches apart This close spacing helps to blanch the stalks and smother weeds Once the crop is established mulch heavily with straw grass clipping or other organic matenals Like cauliflower celery likes moist soil Do not let the soil dry ouL Moisture stress is the main cause of stringy tough stalks Celery also requires large amounts of fertilizer Apply a complete fertilizer with the compost and then after transplanting apply one half tablespoon of nitrogen fertilizer per four plants every two weeks throughout the summer Too little fertilizer will not allow the stalks to grow tall and succulent Harvest whole plants when they begt i to size by cutting them below the soil Some gardeners blanch celery with paper wraps by mounding soil around the plants or by growing them in a dram tile Blanching does not affect flavor but does lighten the color of the stalks For news releases from Utah State University go to www usueduttcwsnewsgusu todays htm RKDIAN'T man tar Cp Crc t mUC4mN1 As mentioned previously this week is a ideal for those owning a good pair of binoculars or a small rich field telescope If we wait until 22 30 and look directly south you should find the constellation of Scorpio that tracer out a pattern that looks very closely to that of a Scorpion If ou tew in the area near the bright red star know n as Antares there is a star cluster known as M4 This fine globular star cluster is one of the largest objects of its type and also one of the nearest to us It is probably the easiest of all the bright globulars to locate merely point the telescope to Antares and then move 13 Moon diameters) and there you are It degrees directly west ( a little over 2 and is an easy object in binoculars and on truly dark nights it can be seen w ith the naked eyes This star cluster has been estimated to be about 5700 light years from us and contains well over 0000 stars The exact amount has ne er been counted but w ith telescopes of four inches in aperture or greater the individual stars can easily be resolved M4 is truly stunning in scopes often inches or more The photograph below will give some idea of what can be expected to be seen in a four inches of aperture rich field telescope using 45x magnification Ahtle looking at M4 the area tn Scorpio is so rich in nebulosity star clusters multiple star systems other star clusters and of course the Milky A ay that runs right through the constellation that it might be impossible to list them here Just rove this area whether it be binoculars or a RFT and be assured that your time will not be wasted f POOR C i t fWOrflXft tt M ( j UMAX' |
