Whip just until soft peaks will form. Do not overbeat. Use as topping for cake and strawberries. Makes 2 cups, or 6 to 8 servings. Strawberry Tarts (Dad will like these, too!) 1 pastry recipe (your favorite) Roll dough to about inch thickness. Cut into 6 circles about-- 6 inches in diameter. Line medium size custard cups or 4 inch tart pans with pastry. Flute edge. Prick with fork. Bake in very hot oven, 450 F. 8 to 10 minutes. Alakes 6 shells. Filling; Combine 3 tablespoons cornstarch with cup sugar. Add cup water and mix well. Add 2 cups sliced fresh strawberries, and cook, stirring constantly until mixture is clear and thickened. Stir in V cup sugar' until dissolved. Mix in 14 teaspoon lemon juice and 2 additional cups fresh sliced, strawberries. Tint, if desired, with a drop or two of red food coloring.
