Both of these appetizers are smart to introduce a holiday or company dinner and their concoction is neither mysterious nor difficult. Arrange pineapple and grapes in a glass- - Over these place orange sections cut in halves and grapefruit sections xut in halves. Cover with grape juice and top with a sprig of mint. Not always must a fruit cocktail be served in glasses. Heres one that takes the form of a canape. On each plate arrange a small slice of pineapple, cut in several places without losing its shape. Lay a smaller slice of orange, also cut in several places on top of the pineapple. On the orange arrange slices of banana and top with a maraschino cherry. Rules for several of these appetizers featuring fruit in season will come in handy. Fruit Cocktail Three grapefruit, 3 oranges. 1 cup banana balls, 2 tablespoons lemon juice, 6 tablespoons powdered sugar, 1 small bottle maraschino cherries. Peel and section grapefruit and oranges. Combine ingredients and chill. White cherries and white grapes, seeded; diced pears or diced pineapple may substitute for the banana balls.
