When well soaked put It over the fire and cook until it 13 quite clear and the tapioca practically dissolved. Take from the fire and cool. Peel the oranges, cut them in thin slices and let stand in the cup of sugar while the tapioca is cooling. Add the can of drained pineapple to the oranges and sugar, and these in turn to the cooled tapioca. Whip the egg whites very stiff, fold into the tapioca mixture and turn into a dish to he chilled. Serve with whipped cream, or with a foamy custard sauce made from the egg yolks. Two egg yolks beaten to a thick cream with cup sugar, a pinch of salt, and a scant teaspoonful of cornstarch .. Stir into two cups of boiling milk and cook to a thin cream. Take from fire and wdiip with the egg beater while cooling... Add flavoring extract (peach is nice), pour intoa pitcher and chill.
