However, foods stored in direct sunlight, near hot pipes, above a range or refrigerator or in kitchen cabinets can lose quality much faster. For the best flavor, USU extension nu'rition specialist Georgia Lauritzen suggests using only young, tender freshly harvested fruits and vegetables. According to USU extension nutrition specialist Georgia Lauritzen, iodized table salt causes pickles to turn dark. LOW SODIUM: Salt is not necessary for processing home canned foods, according to Georgia Lauritzen, USU extension nutrition specialist. Salt is used only for flavoring canned home-canne- d foods. Two years ago when Mendenhall was collecting zucchini pineapple samples, he found about five percent of the sample to have unacceptable and dangerous add levels. The great lesson to be learned from this is that it is unwise, if not foolish, for consumers to formulate their own foods," redpes for Mendenhall says Most consumers have no equipment at home to measure acidity or to determine effective processingtimes. The USU Extension service has tested and found two safe reapes for zucchini pineapple: USU Service forExtension mulations: FORMULATION I 9 cups chunked peeled zucchini lMi cups sugar 46 oz. pineapple juice cup lemon juice FORMULATION II 1 gallon zucchini 3 cups sugar 46 oz. pineapple juice lk cups lemon juice Combine all ingredients and simmer 20 minutes. Hot fill and water bath for 20 minutes (sea level). The USU nutrition specialist says it critical that consumers follow recipes exactly when trying to create an add food (zucchini pineapple) from a low add food such as zucchini. The add content helps prevent the germination of spores that cause botulism. He says it is vitally important that the zucchini be cooked in the add (pineapple and lemon juice) before filling the jars in order to ensure that is For the third consecutive year, a University of Utah Medical Center research project on mental retardation has been selected as the national philanthropy project by Clipped Wings, an organization of United Airlines stewardess alumnae. The $10,000 grant from Clipped Wings will be used by Dr. Patrick F. Bray, professor of pediatrics and neurology and chief of the Division of Pediatric Neurology, to study the of one virus, herpes which cytomegalovirus is the most common infectious cause of mental retardation and brain damage in unborn children. The recent award brings to $40,000 the total monies Dr. Bray has received from Clipped Wings over the past three years. Dr. Brays research focuses on the and other hercytomegalovirus all of can damage which pesviruses. the nervous system. The virus infects approximately one percent of all newborns, and 10 percent of these infected neonates have symptoms of brain damage. We are pleased with Dr. Brays progress in this work and hopeful that someday his research will help mental retardation in prevent newborns. savs Kathy Barnard, former national philanthropy research chairman for Clipped Wings. Barnard is one of 23 members of the Utah Clipped Wings chapter and among 1.100 members nationally. Clipped Wings has sponsored various selling proiects to support its philanthropic work. The most popular project, a book of recipes from the Clipped Wings membership entitled Coffe, Tea or My Favorite Redpeisin its second printing and will be available in time for holiday giftgiving. Commenting on the importance of the grant from Clipped Wings, Dr. Bray says. The public may have the impression that it takes a multimillion dollar government grant to do worthwhile research. Obviously, the more financial resources a researcher has, the more work he or she can do, and more quickly. Utah has been acquainted with Miles Homes for two and a half ut years. Chuck has looked forward to moving to Utah because of its beauty and the pioneer heritage of her people. In the days when Utah was young, people built their own homes with the sweat of their brows, their own hands and sometimes those of helpful neighbors," says Lee, the pioneers of today have limited means, no down payment and cant afford high mortgage payments. However, they do have desire. If these pioneers are willing to build in Sweat Equity by doing some of the work themselves and with help from family, friends or professionals where needed, this in effort, will take the place of a down payment. Lee concludes, Under the Miles Shelter Finance Plan, todays pioneers can obtain materials for their home on a two year financing plan with no down payment required. In most cases, the building lot needs only to have ten percent or 15 percent paid on it. The Miles plan also provides financing for both foundation and finishing materials. ..and monthly payments are kept low. ..American Dream. ..home ownership, American Way. Build it yourself. |
