To start the column off, we want to give special thanks to Marti AUes of the Roaring Fork Rev iew for her ideas on foods for backpacking and camping. Beef Tins week we are starling a new column and hope that ue can encourage reader Jerky strips with the soy sauce, the garlic salt and the lemon pepper Place the strips close together, but not touching, m a single layer, on a rack over a baking sheet Bake in a slow oven (about 150 to 175 degrees) over night, or for 2 hours Store the jerky at room temperature in containers Note: the beef jerky should not be crisp If it is, the oven temperature is too high Cut round steak into long thin strips. Again cut with the grain and dip strips into hot salt solution ( j cup salt to one gallon of water). Dip until meat begins to turn white Drain meat well Have a mixture of salt and coarse ground black pepper ready Coat the drained meat on both sides with this mixture Hang the meat strips in the sun to dry. Must be elevated from the ground A clean wire screen works well The sun and air must reach the meat for the drying process The meat strips may be covered with a thin sheet of cheesecloth After a day or tw o of drying in the sun, turn the strips to make sure they are completely dry. Jerky Cut beef or venison in foot long strips Be sure to cut with the grain for stringiness Mix a strong salt and w ater solution Dip the meat into this solution until meat is white. Lay the strips out in the sun Meat must be hung until throughly dry When the meat is dry, store in containers with holes in the cover, or use cloth sacks Air must penetrate to the meat The meat may then eith r be eaten as jerky or cooked in a stew 10-1- air-bg- Campfire Trout Clean and dry fish. Place chopped onion ana butter inside of trout. Place on foil and sprinkle with lemon juice Wrap in foil and place on coals Cook for approximately 8 minutes on each side Larger fish will take a few minutes more Fish is done when it pulls easily from the bones. Mix well. Add the melted shortening or corn oil, mix in dry ingredients with a fork until the mixture is fine and crumbly. Seal the mixture in a large, heavy plastic bag. It is now ready for backpacking When you are ready to make the bread, open the plastic bag and stir in the ingredients Make a well in the center of the ingredients (still in the plastic bag) and pour the water or milk into the well Mix well and work mixture into a stiff dough. The dough may need a little more or a little less water to hold its shape. Place a piece of foil on a flat rock Flour the foil and turn the dough out on it. With floured hands, pat the dough into a cake the size of the skillet you plan to use. Grease the skillet lightly with the butter or bacon grease. Heat the skillet, set the dough in it. If you are using a reflector oven, the bread! will need to bake approximately 20 minutes. If you are making griddle-cooke- d bread, protect the bread to the windward side with foil. Cool on one side for 10 minutes, then flip with a spatula. When you are ready to mike the corn pone, mix the dry ingredients in the plastic bag slightly. Add the egg if you are using a fresh one. Add the water and half of the bacon fat. Mix thoroug ly in the plastic d dough. Heat the bag to make a other half of the bacon fat in a skillet. Pour the corn pone dough in, cook until the top of the batter is dry, about 10 minutes.
