Cut in shortening until mixture resembles coarse meal. Stir in shredded cheese. Add water one tablespoon at a time until dough forms into a ball. Divide into 5 portions. Using hands or rolling pin, press or roll each portion into a 6 A inch round. Place on baking sheet and prick generously with fork. Bake in a 375 oven until golden brown, about 12 minutes. Remove from oven and loosen pastry gently with metal spatula while hot. Handle rounds carefully because they are fragile. For Cheese Filling: Beat cream cheese until smooth and fluffy. Add remaining ingredients except sour cream; mix well. Fold in sour cream. Spread between pastry layers and over top. Garnish with almonds, parsley and olives as desired. Wrap tightly with Saran Wrap, inserting 5 wooden picks o keep saran above cheese. Chill at least 8 hours before cutting into thin wedges for hors doeuvre or canape serving. Regular cream cheese is not recommended because it may crack. There will be few holiday lights this Christmas, because of the energy crisis.
