In the land of eastern Spain rice is a must with meat and poultry Sometimes the foods are mixed together. On other occasions the sunny rice dish is the hot accompaniment. Because of its convenient size, the turkey roast, either all white meat or a combination of light and dark, fits many serving situations. The meat is tender and ju;cy because of a built-i- n butter basting. Each frozen boneless roast is packed in its own foil pan ana goes from freezer to oven without thawing. Turkey Roast with Saffron Rice Yield: 6 servings 2 cups cooked rice pound Butter Basted 6 medium tomatoes, Swifts Premium cut into wedges Turkey Roast stick (Vi cup) butter teaspoon coarsely ground black pepper or margarine !4 teaspoon saffron small onion, chopped Vi teaspoon oregano garlic clove, crushed Cook turkey roast according to package directions. While the turkey roast is baking, melt butter in a skillet. Saute onion and garlic until onion is tender. Add rice, tomatoes and seasonings and combine. Cover and cook over medium heat for 5 minutes.
