Show Chronicle-Advertis- Sun er November 4, 1971 Thursday, Ogden butcher reminisces Letter to Editor lute Must traps be final? ground ini Dear Editor, I was reading the article by Glen Perrins These days (in 1971) are the good old days - much better than the early days both the customers and the grocerymen and butchers. So says retired Ogden butcher, Walter A. Cardon, who operated early day meat markets and retired in 1961. For example, in those days butcher shop operators had to make their own lard, corn beef and weiners. Hunters brought their deer, elk and even bear to the butcher shops for the butcher to cut up the meat and wrap it in different size portions as the customers directed. This was a way of living then, and meat cutting shops flour- markets in Ogden was one operated in 1908 by the Cardon brothers at Five Points, Walter A. What a difference in meat counters now, says Mr. Cardon. "They are better for meat cutters and patrons alike. The variety of meat and the methods of preparing meat items in those days were crude when compared to what they kid him and his brother Ray Cardon. When patrons would come into our market for worth of good round steak, said Mr. Cardon, theyd joke about us butchers weighing the the meat accurately - Dont weigh your thumb with that steak, theyd say. (My thumb is worth its weight in gold, he says.)
