Also, for the hunter, I have some delicious ways of preparing venison. There is a fun recipe for breakfast turnovers made with the canned refrigerated biscuits both easy and tasty. Your kids will love these! venison ham (approximately) match-siz- e strips cup fresh parsley, snipped extra fine xk cup flour 1 tsp. salt 1 tsp. freshly ground black pepper 1 cup vegetable oil Flour, about 2 Tbsp. 1 cup chicken broth 1 cup dry red wine, or you can use extra chicken broth or wine vinegar 1 cup water 1 cup onion, chopped 1 cup green onions, chopped lk cup bell pepper, chopped cup brandy, optional 1 lb. fresh button mushrooms Vfe can (10 about it October 8 Ordinary People, by Judith Guest will be the topic for discussion Tuesday, Oct. 8 at the third, Lets Talk About It, series. Marinate venison for several hours in wine vinegar. Wipe dry and with a larding needle, if possible, or an ice pick, force holes into venison at fairly regular intervals and insert strips of salt pork which have been rolled in parsley. Be sure some of the salt pork is as close as possible to the bone, for venison is extremely lean. Trim off any protruding ends pf the pork. Beat Vfe cup flour mixed with salt and pepper into roast. Use all of it. Heat oil in iron pot to smoking point. Carefully brown venison on all sides. Use tongs to turn so juices will not be released. Remove venison and add to oil about 2 Tbsp. more flour. Stir until mixture is deep, rich brown. Add chopped vegetables and cook until onions are transparent. Add broth, wine (if used) and water. Cook 10 minutes. Lower fire to simmer and gently add venison ham to sauce. Cover and simmer about 2 hours, or until done, turning ham occasionally. Remove ham to platter. Strain gravy; boil it up and add brandy, if desired. Simmer a minute or two and add mushrooms. Cook slowly five more minutes. Serve sauce over thinly sliced venison. The discussion will be held at the conference room in the Uintah County Courthouse at 7 p.m. The lecture will be followed by a group discussion. Participation in the program is open to any community member at no charge. The books are available at the library. VENISON STEAK lb. venison steak, tenderized by pounding Worchestershire sauce Flour, salt and pepper salad oil 1 Tbsp. 1 large onion, chopped bouillon cube dissolved in two cups water cup water mixed with 1 Tbsp. flour Tbsp. parsley flakes 1 1 Place venison in a pan in your refrigerator and sprinkle generously with Worchestershire sauce. This helps remove some of the strong odor of the venison. Do this the night before cooking steaks. Remove all fat from steaks. Boil 2 cups of water and dissolve bouillon cube. Also mix 1 Tbsp. flour in 1 full cup water. Chop onion. Sprinkle steaks with flour, salt and pepper. Put salad oil in heavy skillet and brown steaks on both sides. Turn to simmer and add bouillon mixture, flour and water mixture and parsley flakes. Simmer steaks over a low fire for at least an hour or until tender. Add water when necessary. One pound will serve two people. pepper and dust lightly with flour. Meanwhile, saute diced salt pork in Dutch oven or heavy pot. Add meat and brown over low heat, turning pieces so they brown evenly. Add remaining ingredients, cover and simmer until done, about 1 hour and 15 minutes. Test for doneness. Thicken gravy, if desired, by rolling small balls of butter or margarine in flour and stirring into gravy. More stock or bouillon may be added if desired. Remove cloves before serving. Makes 6 servings. SOUR CREAM APPLE PIE or 7 tart apples lemon Juice of cup sugar cup flour 1 tsp. cinnamon Vi tsp. nutmeg Vfe tsp. apple pie spice Vi cup butter 1 cup sour cream 6 Arrange pared apples in unbaked pastry shell. Use a deep 9 pan. Sprinkle combined ingredients over apples and spoon sour cream on top. Bake 30 minutes at 400 then reduce heat to 350 and bake 45 minutes longer. Whenever sour green apples are available, use them. They add so much flavor!
