It comes in lengths from 6 to 14 inches and is used for dicing, slicing, mincing and cutting. The shape of the blade, wide at the handle and gradually tapered to a point, allows the experienced cook to rock the knife when slicing ruits or vegetables. To do so, the point of the knife is put in a fixed position on the cutting board. The vegetable is pushed along and sliced as the knife is lifted up and down in a continous rocking motion. BUTCHER. The butcher knife, about 7 to 9 inches, is probably one of the largest and most useful kichen knives. It is used for heavy-dut-y cutting of bone joints, for meat trimming and for cutting, cubing or dicing raw meats. Used for carving and slicing meat, large fruits (i.e., pineapples, melons), boneless roasts and SLICER-CARVE- hard-cruste- knife blocks designed for that purpose.
