By Creekview Food ROSANN FILLMORE Sun Advocate editor With Memorial Day coming and the inevitable backyard picnics and barbecues, its time to search the recipe files for cold and luscious desserts. e favorite is my My mothers recipe for freezer ice cream. Another cold, but rich, family favorite is frozen lemon pie. Filled with eggs or low it isnt low-ccholestrol but it is delicious. and-crea- Ice Cream Scald: 1 V pt. milk. Beat: 4 eggs. Mix with: 4 tbsp. cornstarch and a little cold milk. Stir into scaled milk. Add: V tsp. salt, l'a to 2 cups sugar. Cook until thickened. CooL Add: 1 pt cream, 1 can evaporated milk and enough milk to finish filling freezer can about 3 from top. Add: vanilla and lemon extract to taste (several tbsp. as flavor freezes out). Freeze according to ice cream maker instructions. l'i Frozen Lemon Pie c. sugar grated rind and juice of 2 lemons 6 egg yolks slightly beaten Cook in double boiler until thick and then chilL Beat 6 egg whites until stiff and add 6 tbsp of sugar. Fold into filling. Beat one pint of cream. Fold into filling. Roll graham crackers very fine, sprinkle on bottom of 9X13 cake paa Pour lemon mixture over crumbs and sprinkle the remaining crumbs on top. Freeze four hours.
